Muffulettas are a classic sandwich made in New Orleans that originally originated in Sicily, but has become known as a quintessential Louisiana sandwich. The Best Tuna Salad

Tuna salad is way underestimated in my opinion. I make a batch at least once a week and it’s hands down one of my favorite healthy lunches! Everyone has their own favorite way to make tuna salad, but I learned this recipe from my mama years ago (she learned from her dad), and I might be biased, but our recipe truly is the best! I season mine with old bay, a classic seafood seasoning, and put lots of crunchy goodness in there for texture and flavor. Tuna salad is so great for meal prepping, which is why I tend to make this recipe almost weekly. Do yourself a favor and make the best tuna salad you’ve ever eaten by following my simple but flavorful recipe!

Tomato Jam BLT's

Happy Monday guys!  How was your weekend?  My in-laws came to visit and we boiled crawfish, went to a Houston Astros game, and got caught in a rain storm!   It was a great weekend spent with family and it definitely went by too quickly, as weekends usually do!  It's been raining here for the past week off and on (monsoon style) and today the sun is finally out and it looks like it's here to stay making Monday a little brighter!  And if it isn't sunny where you are, I have something else that will make your Monday a little sunnier!  My tomato jam BLT's are dabomb.com and you guys are going to flip out when you take a bite of this flavor loaded sandwich!

Y'all know I love my BLT's and I am always looking for new ways to dress them up to make them feel extra special.

Fried Green Tomato BLT's with Caramelized Onion Mayo: My Diary of Us

Delicious BLT's with Oven Fried Green Tomatoes, Arugula and Caramelized Onion "Mayo"

Ok, so I am just going to throw this out there.  This girl loves her bacon.  There is nothing better than the smell of bacon cooking is there?  It's just the ultimate comfort smell to me.  One of my favorite dinners/brunch/lunch/breakfast (you get the idea) is a good BLT.  There is something about the combination of flavors that just really does it for me.  I am always looking for new ways to amp up the regular BLT (not that there is anything at all wrong with the regular), but just to give myself some variety since we have BLT's for dinner in the Spring and Summer almost weekly.  Enter this delicious BLT with Oven Fried Green Tomatoes, Arugula and Caramelized Onion "Mayo".

Holy moly guys, this one is going to send your taste buds into over drive!  It is absolutely to die for.  The first time I made this for Canean, I am pretty sure he fell in love with me all over again.  I might have fallen in love too a little...with the BLT. 

It's one of those sandwiches where you go "mmm" and "oh my gosh" and "this is so good" and "isn't this so good" the whole time you are eating it.  And it's ok, because the other people eating it with you are doing the same thing.  And of course you know I had to make it to where it was somewhat healthy so I could still pile on the bacon.  So instead of frying the tomatoes, I baked them in the oven and instead of using real mayonnaise, I mixed in some nonfat Greek yogurt to reduce the fat.  It's sounding better and better right?

The flavor combinations of the smoky bacon mixed with the green tomato, peppery arugula, and the sweet onion mayo squished in between two pieces of your favorite whole grain toast are perfection.
