30-Minute Shrimp Curry

Currently I am about to watch This is Us and I know I have to get this post written before hand because if I try to watch it while I write this post, my computer keyboard will be covered in tears.  Can anyone else relate?  What is it about that show?  One minute you are laughing, the next...a puddle full of tears.  I love it though, I am not going to lie.  But the real reason you are here is not to hear me go on about how emotional I get while watching a TV show, but it's because you are looking for a quick, easy, and healthy dinner to feed your family this week am I right?  Okay, okay...I hear you and I've got the perfect dinner for any night of the week!  My 30-Minute Shrimp Curry is one of my go-to weekly dinners, is full of flavor, and couldn't be any easier to prepare!

Quick and Easy Asian Salmon Packets

Grilled Chicken Greek Salad

The weather here in Texas has been very Spring like lately which has been fantastic because we have been soaking up the high seventy degree temperatures almost every day!  I am a little fearful of what that means for our summer, but I'll take this window of perfect weather while I can.  I am definitely ready to say goodbye to winter's heartier meals and say hello to Spring's fresh and light recipes that make me feel better as a whole!  For me this means lots of fresh produce, lean proteins, and breaking out my grill more regularly!  You probably are aware by now that I have been known to grill in rainy and cold weather, but there is something so much better about grilling on a sunny and warm evening or afternoon.  My grilled chicken Greek salad is my new favorite that I have added into our weekly dinner rotation and you are going to love it too!

10-Minute Shaved Asian Brussel Sprouts

I have been a little pre-occupied with Parks' birthday and family being in town, therefore I have been a little MIA...oops.  I feel like the past eighteen days of October have disappeared right before my very eyes.  How is it possible that it's almost Halloween?  On top of that, two of my burners on the stove went out last week due to a possible wine spillage (possibly from my mom...we won't tell her though) and I have had to be super creative with our meals due to my limited cooktop.  Easy side dishes that can be done quickly to make room for the next pot are a requirement these days!  My 10-minute shaved Asian brussel sprouts are going to be your new favorite healthy side dish for any day of the week!

15-Minute Confetti Corn: My Diary of Us

15-Minute Corn Confetti

Fresh summer corn is one of my favorite vegetables to eat.  I like it on the cob, grilled, sauteed, and every way in between.  In the past couple of weeks the kernels have gotten so sweet and I've been finding myself buying at least a half dozen at the store every week.  My pregnancy taste buds could eat it plain with salt, pepper, and butter just about everyday, but I know that Canean appreciates a little recipe switch up from time to time if I (and baby) insist on corn being a part of our weekly diet right now.  My 15-minute corn confetti is the perfect side dish to take your corn to the next level!  It's fast, easy, and each bite is full of tiny flavor explosions.

We all need those fast side dishes that can be made from scratch, but can be ready with little to no effort!  Weeknight meals can be saved with side dishes just like this one!  No need for canned or frozen corn here, we are all about using fresh corn that is at it's peak flavor right now!

Chili Lime Grilled Salmon with Fresh Corn Salad

I have already confessed to you my love of corn and how I could eat it everyday.  You could say I am on a corn kick right now, kinda like my blueberry kick that I just got off of.  There is so much of it at the farmer's market and it's fresh and sweet and so great for any meal, any night of the week.  Throw a piece of salmon on the grill, and we have ourselves a healthy meal that is ready in a jiff!

Most of the time I like to eat corn off of the cob because, I dunno maybe I like getting it stuck in my teeth?  No, that can't be it...whatever the reason, I am not sure I even know, I like it.  However, I found myself with 18 ears of corn (they are five bucks for a dozen, how could I resist) in my fridge and figured I should try something different with it.  This is how my corn salad came to be. 

This meal is perfect for getting you back on track after that holiday weekend that we all just came off of with too much barbeque and not enough veggies.  It would be great for lunch or dinner and it's quick and easy for those weeknights when feel like you don't have the energy to cook something that's good for you.
