It’s time for our final week of the January meal planning series and it just might be the best one yet! I’ve got a little something for everyone this week including some yummy soups, meatless options, and make ahead recipes for breakfast and lunch! I have loved the response from this meal planning series and have enjoyed seeing how you all have mixed and matched and picked recipes that work for your family! You are doing exactly what I hoped you would do with these recipes and I hope it has made your life a little easier too!
We are three weeks into January and the healthy meal planning is still going strong! I have absolutely loved seeing the recipes you all have been making and how much you have been enjoying these meal plans! We are going to close out the month strong with some more of my favorite recipes to get you through the end of the month! Because you all loved the make it once, eat it twice or three times approach last week, I am including several recipes for breakfast lunch that you can do just that! I aim to make your life easier in the kitchen and I hope this meal plan does just that!
We successfully made it through week one of the meal plan and I am starting to feel like myself again! Slowly but surely I am starting to get my groove back in the kitchen and I hope you are too! I absolutely loved getting messages from y’all last week about how you were loving week one of the meal plan and I think you are going to love this week just as much! I am a firm believer in the fact that you don’t have to give up your favorite foods or eat just salads when eating healthy! Instead I believe in eating real foods that are homemade with no yucky ingredients that will leave you feeling satisfied and happy! Sound good to you?
I cannot believe August has arrived and back to school has already started! Where did the summer go? But let's be honest, summer actually isn't over yet is it? The heat is still sticking around and we still have a good month or two left of some of my favorite summer produce! Last week I made a random salad based upon what I had in the fridge, and omg guys...it was one of the best salads I have made in a long time! I knew that I was going to have to make it again, and that I needed to let you guys in on this amazing salad combination too! My grilled bbq chicken and peach salad is the quintessential summer salad and it needs to be on your dinner table asap while the gettin' is good!
I have been slacking in the meal prepping department for Parks. I was so on my game at the beginning of the solid food stage and then he got really mobile and I found it super hard to find the time to go pee, let alone fix his homemade meals. Since we entered the can't sit still stage, I won't lie...there has been a hot dog or two thrown into the mix and maybe some mac and cheese...because some days I just need to get food in a hungry and fussy baby's belly and I need fast and easy. Yesterday however, I meal prepped for Parks because my mama guilt of not getting as many nutrients in him each day as possible was weighing heavy on me! Originally I made this dish for just him, and then after tasting the lentils I decided we would be sharing these lentils for a healthy lunch option all week!
It's still raining. Yeah, we are on week two of dreary weather and this gal is overrr it. The backyard is muddy, I have to force myself to be productive, and the only thing that sounds good is a nap and foods that I shouldn't be eating. So in an effort to brighten up this Tuesday I made a colorful and healthy salad that will hopefully turn my rainy day blues around and will keep me full of energy all week long! My apricot, arugula, and quinoa salad with a cumin vinaigrette is just the salad to do the trick! It's gorgeous, full of flavor, and so good for you too!
Quinoa has been around for a while now, and if you aren't using it yet, today is the day to start. It's packed with protein, minerals, and vitamins and is definitely a grain that should be added into your diet! Perfect as a side, or mixed into a salad, I love it just about any way I can get it!
