Veggie Loaded Everything Bagel Pasta Salad

After being out of town for a week, I spent the day yesterday meal prepping to help prepare for a week of getting back on track with work, school, and our regular routine! One of the first items up that I prepped was an easy pasta salad. Pasta salads are on of those dishes that I love making ahead of time because they make easy lunches and/or a simple addition to dinner! Another perk is that they just get better in the fridge after sitting for a day or two. I love that I can add a tons of veggies into the mix to bulk up the pasta along with whatever protein I want to add in whether that be beans, chicken, or cured meats! I am currently obsessed with my new favorite pasta salad which just so happens to use one of my go-to seasonings, everything bagel seasoning. My Everything Bagel Pasta Salad is not only easy to make, but your whole family is going to love eating it all week long!

Healthier Chocolate Zucchini Donuts

My kiddo happens to be a donut lover. It’s the one thing he can’t resist and asks for whenever we are out and about and they are available. Of course the occasional donut indulgence is fine, but when you can make your own at home and the ingredients are all good ones, you don’t have to feel bad about serving them up to your kids any day of the week! With the end of summer approaching at a rapid pace, I find that everyone I know has a ton of zucchini in their fridge and I know I am always looking for recipes to use up my zucchini in new ways! My healthier chocolate zucchini donuts are perfect for a healthy and fun breakfast and they happen to be loaded with all the good stuff!

Easy Lunch Box and After School Snack Ideas

Whole Wheat Cherry Almond Streusel Muffins

July has been a whirlwind of a month between going on vacation, lots of work happenings, and getting the worst summer cold last week. Sleep schedules have been off, diets have been off, and honestly I am ready to get back to some routine around here as we get ready for back to school in a couple of weeks. I cannot believe that the summer is over and we are already prepping for everything back to school! Where did the summer go? One of the ways I always try to get ready for school is to prep easy breakfasts and snacks because mornings are rushed and after school kids are hangry and need something to eat as soon as they get home! Muffins are one of those things that I like to make it advance and keep in the freezer to pull out whenever I need them most! Peanut Butter Trail Mix Breakfast Cookies

Currently we are in a phase of my son waking up and walking out of his room and immediately requesting a “snack”. He doesn’t want to eat a real breakfast just a snack that he can eat and play at the same time of course. Since we don’t do “snacks” before meals, I had to get creative with what his options could be! I needed something that could be nutritious enough for breakfast, but that could also be available without me having to prep anything! (Enter the breakfast cookie!) Double Blueberry Waffles

It’s Monday which means busy mornings are in full swing around here! One of my favorite ways to survive the morning is to have a freezer and fridge stocked with easy breakfasts! I have a kiddo who wakes up asking what is for breakfast before I have even fully opened my eyes and so having a breakfast I don’t have to think about is a lifesaver! Things like mini frittatas, muffins, and waffles are just a few of the recipes I like to have on hand at all times! Lately I am so obsessed with blueberry everything and just can’t seem to get enough! I created these double blueberry waffles on a whim one weekend and have been making them ever since!
