Sexy Fig and Lemon Fizz

I've been buying figs at the farmer's market every week.   I can't get enough of their flavor or their beauty.  The colors and varieties are just so pretty that I stand there debating about which ones to get...probably making the people behind me in line a little impatient.  But oh well, these are very important decisions.  After all you have to pick just the right batch of figs to make sexy fig and lemon fizz cocktails!

And when I tell you that these are sexy cocktails, I mean it.  They are sexy in every way possible.  I'm kinda obsessed with the refreshing, not too sweet taste, and don't get me started on the pink color that you get from the bright flesh insides of the figs! 

If I had to drink only one cocktail for the rest of my life (and I still get to have wine) this would probably be my cocktail of choice.  It's just everything that a drinkl needs to be...not to mention that they look great in my new West Elm cocktail glasses. 

I'm not even going to try to persuade you to make these...they are that good.  I'll let the pictures do the talking and you just let me know what time I'm coming over for happy hour.

Cuban Flank Steak Stuffed Potatoes

My love of steak rivals most grown men.  I can't help it, I love it.  I crave it if I haven't had it in a while and love nothing more than that first bite off of the hot grill.  Ninety percent of the time I just like it as is...some salt and pepper and throw that bad boy on a super hot pit.  That sizzle is a sexy sound in my book.  Then there is about ten percent of the time I like to do something different with steak.  Something like these Cuban flank steak stuffed potatoes...because the flavor combos are the perfect marriage stuffed into a tender and salty potato. 

And...I still get my sizzle.

Spicy with a touch of sweetness, every bite is the perfect combination of everything you could ever hope for inside of a good ole russet potato.  I fell in love with Cuban flavors when we were in Miami and have been wanting to make something ever since...let's see it's almost August, so it only took me five months.  The thing to focus on here is that I did make it, and the good news is, they were so delicious that I am sharing the recipe with you!

Get a little crazy and make some extra, you are going to want them for lunch the next day...and maybe the next.

Peach Mojito

It's Friday, so of course I made you a cocktail again.  I have decided that since it's summer and the heat is out of control that the least I can do is make you a refreshing drink every week, I mean that's just the kinda girl I am.  And the peaches at the farmer's market right now have been so dang sweet and juicy that I couldn't resist making another cocktail with them.  This peach mojito is going to make you very happy and it's the perfect refreshing drink when it's a thousand degrees outside.

I was reading one of my favorite foodie bloggers Heather Christo, when I stumbled upon her nectarine mojito (she has gorgeous cocktails) and I immediately realized that I need to make a peach mojito!  Genius.  And turns out the flavor combo of peach, lime, mint, and rum is dynamite!  The peaches were so sweet, that I only had to add agave to sweeten the drink ever so slightly, which means you don't have to feel bad about drinking more than one...

By now, maybe you have made my peach and blueberry sangria (if not that's ok you still can), and now you will have to try my peach mojito!  It's ready in a jiff, looks super fancy, and is so delicious!  Even Canean who isn't a mojito connoisseur like myself, but loves him some peaches, ended up loving this drink!

Listen, make it tonight...make it tomorrow, I don't care as long as you make it!

Chili Lime Grilled Salmon with Fresh Corn Salad

I have already confessed to you my love of corn and how I could eat it everyday.  You could say I am on a corn kick right now, kinda like my blueberry kick that I just got off of.  There is so much of it at the farmer's market and it's fresh and sweet and so great for any meal, any night of the week.  Throw a piece of salmon on the grill, and we have ourselves a healthy meal that is ready in a jiff!

Most of the time I like to eat corn off of the cob because, I dunno maybe I like getting it stuck in my teeth?  No, that can't be it...whatever the reason, I am not sure I even know, I like it.  However, I found myself with 18 ears of corn (they are five bucks for a dozen, how could I resist) in my fridge and figured I should try something different with it.  This is how my corn salad came to be. 

This meal is perfect for getting you back on track after that holiday weekend that we all just came off of with too much barbeque and not enough veggies.  It would be great for lunch or dinner and it's quick and easy for those weeknights when feel like you don't have the energy to cook something that's good for you.

Peach and Blueberry Sangria

Fridays and cocktails...we have talked about this before.  They just go together right?  You've had a hard week, you have been waiting for today since the moment you woke up to go to work on Monday, and it's finally here!  You need a cocktail, I get it.  I have your back.  I have a cocktail recipe for you to make this weekend so you don't even have to think about it!  It's not just any ole sangria...it's peach and blueberry sangria!

By now you know that I went blueberry picking last week and that I have basically been putting blueberries in anything and everything that I possibly can!  So naturally it only made sense when I was making a sangria that blueberries should be included.  And peaches just seemed like the natural choice for another fruit to add since I had some fresh and local ones from the farmer's market!  And they do pair quite nicely together! 

It's refreshing and perfect for quenching your thirst on a hot day.  Or you know what?  It would be amazing at your Fourth of July party!  It's so pretty...AND you can make a big pitcher of it the night before! 

Because the last thing you need to do on the day of a party is worry about mixing up a batch of cocktails.  But even if you aren't having a party go ahead and make the sangria!  It will keep in the fridge for a couple of days so I think you will be able to handle it yourself.
