I have been slacking in the meal prepping department for Parks. I was so on my game at the beginning of the solid food stage and then he got really mobile and I found it super hard to find the time to go pee, let alone fix his homemade meals. Since we entered the can't sit still stage, I won't lie...there has been a hot dog or two thrown into the mix and maybe some mac and cheese...because some days I just need to get food in a hungry and fussy baby's belly and I need fast and easy. Yesterday however, I meal prepped for Parks because my mama guilt of not getting as many nutrients in him each day as possible was weighing heavy on me! Originally I made this dish for just him, and then after tasting the lentils I decided we would be sharing these lentils for a healthy lunch option all week!
The weather has turned here in Texas, and I am hoping it's here to stay! The nights have been chilly, the days crisp, and I've been in the mood for all the soups. I am one of those people who could eat soup on a hot summer day, but I don't make them as much because Canean is definitely not one of those people. This gets me really excited for fall and winter when I can make as many soups as I want! My spicy roasted tomato basil soup is one of those soups that will become one of your favorites that gets put on dinner rotation. I have a confession, I am not really back into the kitchen yet. This recipe was one I made and shot before giving birth that I had planned on blogging before I went into labor. And I'm so glad I had it on the back burner to have ready to go post baby because last night was my first night back in the kitchen in over a month! Easy dinners are an absolute essential for me right now, especially because Canean has been having to do some of the cooking while I have been in recovery/new baby mode! My spinach, sun-dried tomato, and goat cheese stuffed sweet potatoes are the perfect easy dinner or side and happen to be packed full of nutrients and can be ready without breaking a sweat.
