Breakfast casseroles are one of those dishes that come in handy for meal prep and when you have guests that will be staying in your house. Whenever I need to feed a crowd for breakfast, this casserole is my go-to recipe. What I love most about it, is that I can prep the ingredients the day before and have breakfast in the oven before my guests even wake up, leaving me time to sip coffee and visit while it bakes! ( #winning ) While there are an endless variety of breakfast casseroles out there, this is one that has been in my family for forever and though I might be biased, I truly think it’s the best! My egg, sausage, and hash brown casserole is a crowd pleaser every time and couldn’t be any easier to make!
Bye Bye January and hello February! Anyone else feel the same way? I always feel like January is a slow motion month where I can’t seem to find my rhythm after the holidays. It’s basically there so we can adjust to normal life again and then in February we get to really start our new year. Or maybe I’m alone in this and I need to get my act together sooner next year…either way I am welcoming February with open arms! I am finally over my shingles (yeah I had shingles last week if you missed it) and I feel like I am all about eating things that makes me feel good and that nourish my body as I am healing! I have been loving adding this Spicy Kimchi Avocado Toast into my morning or afternoon because it’s not only delicious, but packed with serious nutrition too!

Hi friends! How was your weekend? The sun came out to play and we took full advantage of it! On Sunday the weather was absolutely perfect...79 degrees and sunny with a breeze. This is the kind of weather I have been waiting for! We walked down to our neighborhood snoball stand, grabbed two dreamsicle snoballs where right next door they boil amazing crawfish, so we grabbed some of those too. We had a picnic on our front porch and ate crawfish and snoballs all barefoot and happy! Today, I'm back on track with healthy recipes now that some of my food aversions have left the building and I'm kicking the morning off right with one of my citrus ginger smoothies!
