Happy Friday friends! Has this been a long week for you? Because it definitely has been for me! Between Parks still waking up in his big boy bed during the night, the hubby working late a few nights this week, and my own work, I have been counting the days until the weekend and a lazy Saturday morning! To me there is nothing better than a weekend morning where you don’t have to rush out the door and can make a special breakfast that can be enjoyed by the whole family! My chocolate chip pancakes with a blood orange chia syrup are going to make your weekend just a little bit sweeter!
Happy Monday guys! How was your Easter weekend? I hope it was filled with chocolate, friends, family, and maybe a little rest too! We had a great weekend spent playing outside in the sprinkler, hunting for eggs, and stuffing our bellies full of BBQ. I have however been battling a cold, and while it hasn't made me feel horrible, it has got me sneezing and my nose running like crazy. Whenever I feel my body starting to get sick or worn down I always try and rev up my smoothie intake because I can cram a ton of good ingredients into one drink! Hi friends! How was your weekend? The sun came out to play and we took full advantage of it! On Sunday the weather was absolutely perfect...79 degrees and sunny with a breeze. This is the kind of weather I have been waiting for! We walked down to our neighborhood snoball stand, grabbed two dreamsicle snoballs where right next door they boil amazing crawfish, so we grabbed some of those too. We had a picnic on our front porch and ate crawfish and snoballs all barefoot and happy! Today, I'm back on track with healthy recipes now that some of my food aversions have left the building and I'm kicking the morning off right with one of my citrus ginger smoothies!
Citrus season is almost over, and I couldn't be more sad about it. That's why I am getting in a few last recipes using all of my favorite kinds of citrus varieties. My citrus ginger smoothie is packed with good for you ingredients and is a cinch to blend up for a breakfast on the go!
There are many reasons for today's cocktail being a daquiri. Maybe I'm getting sentimental about leaving Louisiana, maybe it's because the Super Bowl is Sunday, maybe it's because we are in full Mardi Gras swing around here, or perhaps it's because this daquiri is the perfect shade of light pink and would be so pretty on Valentine's Day. But whatever the reason, you are getting a daquiri today and it's pretty jam up (that means pretty amazing in my hubby's terms.) My spiced blood orange and coconut daquiri is perfect for a party and is the flavor combination is on point!
To be honest here, you could omit the alcohol and this would be a delicious daquiri turned smoothie that would be perfect as an afternoon pick me up or as part of your breakfast. But let's just add the alcohol here...it's kind of like a jazzed up creamsicle, adult style. And who doesn't love a creamsicle?
I skipped last Thursday's cocktail and I apologize because I know it was hard to go about your weekend without a cocktail. But it's ok because this week I have the daintiest, prettiest, and most delicious drink for you. It's definitely a girl's brunch kind of drink and I 'm not thinking the men in your life are going to approve all that much...but who knows, Canean has been known to like a girlie drink here and there!
Grapefruits are just about to come into full season here in Louisiana, and we are pretty lucky to have local ones that grow during the winter months. I eat them like an orange, just peel and eat no sugar necessary. For some reason I grew up only slicing them in half and sprinkling sugar on them before eating them, which pretty much cancels the healthiness right out. It wasn't until about five years ago that I just ate one like I would an orange and I loved it!
