With Spring on the brain, I am suddenly in the mood for all sorts of salads and color on my plate! It has been unusually cold here this week in Texas, but that does not change the fact that I have been day dreaming about sunny Spring days that are in the very near future! While wintery meals tend to be more laborious, I love how with the switch of seasons, meals become more simple and effortless. Simple salads are one of my favorite things to make at this time of year when the days gets longer and the weather gets nicer! My weekly routine has been out of whack the past couple of weeks. My gym days have been off, my diet has been decent but not great, and the reality is...that's just life sometimes. This week is the first week in a while that I feel like will be back to normal "ish" again and one thing that is going to help me stay on track is meal prepping my lunches!
