Salted Brown Butter Pumpkin Rice Krispie Treats

It’s that time of year when I start breaking out my cans of pumpkin and making all of the pumpkin flavored things. These salted brown butter pumpkin rice krispie treats are one of my new favorite pumpkin recipes that are perfect for fall. They are the perfect sweet treat for the season and are super simple to make as well. They are perfectly chewy, with a hint of pumpkin and spice in the background made extra tasty with brown butter which really takes these rice krispie treats to the next level.

These salted brown butter pumpkin rice krispie treats are perfect for every fall festivity including game days, Halloween, and Thanksgiving but are also easy enough to make to have on hand for after school snacking. I can guarantee that this fall version of a childhood favorite treat will not last long in your house.

The best part about these rice krispie treats is that they take about 5 minutes to make with minimal prep and effort. The brown butter really adds a nice nutty depth of flavor and then the pumpkin and cinnamon add that touch of fall flavor that really sets these rice krispies apart from the traditional version.

You can add a white icing and googly eyes to them to make them spooky for Halloween or just keep them simple as is! Either way they are going to be a hit with all of your friends and family!

Variations to try:

  • Use regular melted butter instead.

  • Add in chocolate chips.

  • Omit the flaky salt, though I recommend giving it a try because it really adds to the overall flavor.

  • Use pumpkin pie spice instead of plain cinnamon.

Salted Brown Butter Pumpkin Rice Krispie Treats

Ingredients:

  • 1 Box Rice Cereal

  • 1 Bag Marshmallows

  • 1 Stick Salted Butter

  • 1/4 Cup Pumpkin Puree

  • 1 Tsp Vanilla

  • 1 Tsp Cinnamon

  • Flaky Salt

Directions:

  • Add butter to large pot and begin to melt, stir until butter begins to brown and starts to bubble.

  • Add in pumpkin, vanilla, and cinnamon and whisk to combine.

  • Add in marshmallows and keep stirring until melted.

  • Add in Rice Krispie cereal and stir to coat.

  • Add to a parchment lined cake pan and smash down into an even layer.

  • Sprinkle with flaky salt and let cool completely. Slice and serve!
