How to Grill a Steak Perfectly

Learn how to grill a steak perfectly every time with a few simple tips and tricks, plus learn which cuts of steak are best for the grill. From ribeyes to filet mignon and every cut in between, learn the basics of becoming a grill master and perfecting your steaks! A good quality steak requires only salt and pepper for seasoning and when cooked correctly, is perfectly seared on the outside of the steak, while remaining juicy and cooked to your desired doneness on the inside. Learning how to grill a steak perfectly will have you enjoying a restaurant quality steak right in your backyard.

Best cuts for Grilling:

  • Ribeye (my personal favorite)

  • Filet Mignon

  • New York Strip

  • T-Bone or Bone-In ribeye (these will take a bit longer to cook)

  • Skirt Steak or Flank Steak (These usually require a marinade to help tenderize them and must be sliced against the grain when slicing.)

Tip: Look for good marbling throughout the steak to ensure that the steak will have good flavor as the fat melts into the meat as it grills. Also, use steaks that are 1.5'“-2” in thickness to ensure they don’t overcook too quickly.

Prep the Steaks:

  • Bring steaks to room temperature for at least 20 minutes before seasoning and grilling.

  • Season liberally with salt and cracked pepper on both sides of the steak ensuring that it is coated thoroughly.

  • If using a marinade or if steaks are too moist make sure to drain off the marinade or pat dry with a paper towel before seasoning so that the salt and pepper stick and they get a nice sear on the grill.

Prep the Grill:

  • Make sure to preheat the grill and remove any leftover residue on the grates before adding the steaks.

  • Preheat grill to 500 degrees.

Grilling the Steaks:

  • Place the steaks over direct heat for 6-7 minutes on the first side. Do not flip until the steak releases easily off the grates.

  • Flip and cook another 5-6 minutes on the second time until internal temp is 130 for medium rare, 140 for medium, and 150 for medium well. Use a meat thermometer to double check temp.

Notes: Cook time will depend on the thickness and cut of your steak. If flare ups happen, simply move the steak off the flame to ensure the outside doesn’t burn.

Ingredients:

  • 2, 1.5” Thick Ribeyes

  • Kosher Salt and Cracked Pepper (about 1 tbsp. of each at least)

Directions:

  • Heat grill to 500 degrees.

  • Let steaks come to room temperature for 20 minutes before seasoning.

  • Season liberally with salt and pepper on both sides.

  • Add steaks to direct heat and cook on the first side for 6-7 minutes before flipping and continuing to cook the second side for another 5-7 minutes until cooked to desired temperature.

  • Let the steaks rest at room temperature for 5 minutes before slicing.

Note: You can add an herbed butter at the end if desired.
