What makes it Cajun?
The secret is in using Tony Chachere’s Creole Seasoning (my favorite) to the creamy dressing + a little Creole Mustard. It gives the pasta salad that bold flavor that perfectly compliments the creaminess and richness of the eggs and dressing.
Adjust the spice level to your preference.
Tips for the Best Pasta Salad
Cool the pasta and the eggs completely. Chilling these allows for the pasta not to soak up the dressing and cooling the eggs keeps the texture right.
Make it ahead of time. This pasta salad tastes even better after 24 hours in the fridge allowing the flavors to meld together.
Save a little of the dressing to add right before serving. As the pasta chills, it will absorb some of the dressing, so I like to add extra dressing on top right before I serve it.
Variations
Use whatever shape of pasta you prefer and/or use gluten free pasta if desired
Add bacon
Use a sweet relish if you prefer over a dill one
Add in cheese of choice
Add in extra chopped veggies that you have on hand like bell pepper

Storage Tips
Make sure to refrigerate the pasta salad. It will stay fresh for up to 3 days. Give it a good stir before serving and add extra dressing if needed at that time.
Ingredients:
1 Lb. Macaroni Pasta
1/2 Cup Mayonnaise
1/2 Cup Greek Yogurt (I use full fat)
1 Tbsp. Creole Mustard
1/4 Cup White Distilled Vinegar
1 Tbsp. Fresh Lemon Juice
1/2 Tsp Sugar
2 Tbsp. Tony Chachere’s Creole Seasoning
2 Large Celery Stalks, diced small
1/2 Cup Diced Green Onions
1/2 Cup Dill Pickle Relish
6 Boiled Eggs, Diced
Directions:
Boil pasta, drain, and let cool completely.
Mix mayonnaise, Greek yogurt, creole mustard, vinegar, lemon juice, sugar, and Tony Chachere’s Creole seasoning together and whisk well.
In a large bowl add pasta, celery, green onions, pickle relish, and boiled eggs and then add dressing over the top.
Toss gently to combine until all ingredients are coated with dressing.
Reserve some of the dressing to toss right before serving.
Garnish with extra green onions and serve immediately at room temp or refrigerate before serving.
