Happy New Year guys! I hope your holiday was fantastic and your new year has started out just the way you had hoped it would! We are finally all feeling better around here and I have health on the brain as one of my top priorities for this year! I am definitely not talking about losing weight here, but more about over all health and taking care of myself better so I can be a better mom, a better wife, and better at my job! One of my favorite ways to incorporate more nutrients into my diet is to sub cauliflower for things like rice and mashed potatoes when I have those carb cravings hitting me hard! I will admit that I was skeptical on the whole cauliflower rice, pizza crust, and everything in between phenomenon, but of all of these creations, cauli rice is actually pretty dang good! I will go ahead and throw it out there that I would rather just eat real pizza crust if I am going to have pizza, because to me the crust makes the pizza! But with rice, this substitute happens to be pretty tasty!
