The Best Tuna Salad

Tuna salad is way underestimated in my opinion. I make a batch at least once a week and it’s hands down one of my favorite healthy lunches! Everyone has their own favorite way to make tuna salad, but I learned this recipe from my mama years ago (she learned from her dad), and I might be biased, but our recipe truly is the best! I season mine with old bay, a classic seafood seasoning, and put lots of crunchy goodness in there for texture and flavor. Tuna salad is so great for meal prepping, which is why I tend to make this recipe almost weekly. Blueberry Muffin Bread

When the world feels chaotic, my kitchen is a place where I find calm and comfort. Baking in particular is a place to go when I need to rest my brain and ground myself. There is something about perfectly measuring, pouring, mixing, and smelling the delicious comforting smells wafting through the house that is exactly what I need when I am feeling a bit of anxiety creeping in. Loaf breads are always my go-to method of baking because I always have ingredients on hand to whip some sort of variety that never disappoints. My blueberry muffin bread is just the sort of recipe to bring a bit of comfort when you need it most and makes for a delicious breakfast with a cup of coffee to start the day of right.

Easy Greek Rice

Greek style rice is simple, but full of flavor and turns out is super easy to make at home too. We eat rice several times a week and I love switching up the type of rice I make depending on the sort of meal I am making. One meal that I cook at home quite often is my chicken shawarma and Greek rice is a must make for a side dish. I started making this recipe at home after moving from Louisiana and when I no longer had access to our favorite Mediterranean restaurant and couldn’t find another restaurant that compared. I tested out this rice many of times before getting it just right, but finally found the perfect combo of flavors! Now my easy Greek rice is one of our favorite rice dishes and I know that you are going to love it too.

Key Lime Poppy Seed Muffins

Hello March! I am welcoming a new month with open arms and some delicious muffins that are giving me all the Spring feels! I forgot how much I enjoy a poppy seed muffin until I was playing around with this recipe and ended up creating the most delicious muffin! Typically you see lemon with poppy seed in a recipe, but I am here to tell you that key limes are an amazing substitute for the traditional lemon flavor! Key limes are a bit more tart than a traditional lime and are so fun to use in recipes, not to mention they are adorable too! I love baking a batch of muffins for the week for easy breakfasts and snacks and these do not disappoint. While I am traditionally more of a blueberry or chocolate chip muffin kind of gal, these muffins just might have converted me. My key lime poppy seed muffins are definitely one to add into your muffin rotation and I can guarantee your whole family will approve!

Easy Greek Shrimp Sheet Pan Meal

Sheet pan meals are genius don’t you think? One pan, little to no mess to clean up, and everything you need for a complete dinner all one one pan! I mean who doesn’t want more of these types of meals in their life? I know I do! I am always looking for new sheet pan dinner combinations that I can create to make easy weeknight dinners. Shrimp is one of those seafoods that I always like to have hanging out in the freezer because it thaws quickly and can be made into a variety of meals! Simple French Onion Soup

Soups are always a favorite for dinners at my house. There is something so comforting about a bowl of soup that just can’t be duplicated with any other meal. French onion soup is one of those soups that for whatever reason I tend to get when I am at a restaurant, but don’t make at home as often.
