Simple French Onion Soup

Soups are always a favorite for dinners at my house. There is something so comforting about a bowl of soup that just can’t be duplicated with any other meal. French onion soup is one of those soups that for whatever reason I tend to get when I am at a restaurant, but don’t make at home as often. I recently made it and realized just how easy it actually is to make French onion soup and decided I definitely need to share the recipe with you and that we all should be making it more often right in our own kitchens. My recipe for French onion soup is one that just has a few ingredients, but is packed full of flavor and is super satisfying too! My simple French onion soup will quickly become one of your favorites to add into your soup rotation any day of the week!

Roasted Cauliflower and Spinach Grain Bowls

Roasted cauliflower is one of my absolute favorite winter time vegetables! I am definitely the person who needs to make an extra batch for my family because I end up snacking on it as soon as it comes out of the oven and tend to eat half of the pan myself before I have even served dinner. But beyond roasting, cauliflower is so versatile and I love incorporating it into any meals where I can! It’s truly a vegetable that is a jack of all trades if you will. From roasting, to pureeing, to everything in between, cauliflower is the veggie for the job! I love a good bowl situation during the week where I can add veggies, a grain, and maybe a fried egg and dinner is done, and cauliflower is the perfect veggie to add to any bowl mix up. My roasted cauliflower and spinach grain bowls are seriously one of my new favorite dinners and you are going to love them too!

Gluten Free Chocolate Covered Strawberry Pie

Do you celebrate Valentine’s day at home or do you go out with your significant other or girlfriends? We typically stay home and I make a special meal for me and my hubby to enjoy after our kiddo goes to bed! I usually don’t make dessert to go with our meals, but because it’s a special occasion I like to have a little something sweet for after dinner. My hubby loves a pie and so I came up with the ultimate Valentine’s Day pie to surprise him with that is not only easy to make, but is on the lighter side too! Easy Buffalo Chicken Lettuce Wraps

Buffalo chicken is one of those dishes that I get a craving for on a regular basis. I love traditional buffalo wings, but I also love making my roasted buffalo cauliflower and more to satisfy the craving when the craving hits that are a bit lighter. With the Super Bowl coming up, I love the idea of making healthier options to serve to my guests in addition to some more traditional game day foods! Lettuce wraps are one of those things that you can literally put anything inside of to make a lighter option of one of your favorites. Most people think of Asian lettuce wraps only, but truly the options are endless. My easy buffalo chicken lettuce wraps are so satisfying, they make such a great appetizer for game day, and they truly couldn’t be any easier to whip up any day of the week!

Broiled Grapefruit, Yogurt, and Granola Bowls

Citrus season is one of the gifts of winter that keeps me hanging in there until summertime rolls around again. I love that during the dreariest and chilliest part of the year, that citrus can give any dish a bit of brightness. I also don’t think its coincidence that citrus is loaded with Vitamin C when our bodies need it most. One of my favorite citrus of the season is grapefruit. I have so many memories growing up eating grapefruit sprinkled with sugar and sharing a half with my mom. It’s still one of my favorite ways to eat it, so I took that same idea and turned it into a fun new way to enjoy grapefruit as a complete meal for breakfast. My broiled grapefruit, yogurt, and granola bowls are so delicious and healthy and you will love adding them into your breakfast rotation for a little something different.

Miso Butter Sweet Potatoes with Roasted Chickpeas

January always seems to be the month that goes on forever and ever. The weather is always a bit (or a lot) chilly depending on where you live, calling for lots of cozy food. In addition to soup, potatoes are the next best thing to stick to your bones if you ask me! I love using sweet potatoes as much as I can because they are more nutrient dense than a regular russet potato. Sweet potatoes are so versatile and while they are delicious on their own just with a little honey and butter, I love to add savory flavors as well. Stuffing sweet potatoes is a great way to add a variety of flavors and you can create an entire meal with them that the whole family will love. My miso butter sweet potatoes with roasted chickpeas will quickly become a weeknight favorite and the best part is, they are loaded with flavor and nutrition!
