Broiled Grapefruit, Yogurt, and Granola Bowls

Citrus season is one of the gifts of winter that keeps me hanging in there until summertime rolls around again. I love that during the dreariest and chilliest part of the year, that citrus can give any dish a bit of brightness. I also don’t think its coincidence that citrus is loaded with Vitamin C when our bodies need it most. One of my favorite citrus of the season is grapefruit. I have so many memories growing up eating grapefruit sprinkled with sugar and sharing a half with my mom. It’s still one of my favorite ways to eat it, so I took that same idea and turned it into a fun new way to enjoy grapefruit as a complete meal for breakfast. My broiled grapefruit, yogurt, and granola bowls are so delicious and healthy and you will love adding them into your breakfast rotation for a little something different.

Have you ever broiled grapefruit before? It’s the same idea as grilling fruit if you think of it like that. The heat brings out the sweetness in the fruit and in this case I sprinkle the top with a little coconut sugar that gets slightly caramelized on top of the grapefruit making it even more delicious. You can eat it warm or meal prep several grapefruits and have them for the week. I personally love it warm with some cold Greek yogurt, crunchy granola, and honey. It’s the best combo of textures, flavors, and is super satisfying too.

The grapefruit is ready in under 10 minutes so it’s easy enough to make on even the busiest of mornings! I love using my pepita granola on top because it is mostly nuts and not only gives it extra crunch, but adds a little more protein too. You could make this dairy free by using a dairy free yogurt and obviously you can use your favorite granola here too. Feel free to switch up flavors of yogurt and granola and make this your own.

You will love this recipe for breakfast or for a healthy afternoon snack!

Ingredients:

  • 1 Grapefruit, cut in half

  • 1 Tsp. Coconut Sugar (can sub regular sugar or brown sugar)

  • 1 Cup Greek Yogurt

  • 1/4 Cup Pepita Granola (or granola of your choice)

  • 1 Tsp. Honey

Directions:

  • Heat oven to broil on high.

  • Place sliced grapefruits on baking sheet and sprinkle with coconut sugar.

  • Broil for 5-7 minutes until tops of grapefruit just start to caramelize.

  • Remove from oven and place into bowls.

  • Add Greek yogurt, granola, and a drizzle of honey and serve immediately.

Doesn’t get much easier than this right here, so there is no excuse not to serve yourself up something delicious for breakfast this week! Take advantage of citrus season while it’s still around!
