Holy moly, it’s May y’all! I have no clue where April went, but I do know that I happen to love May! There are so many reasons as to why I love May, one of them being that my hubby and I got married in May and this year makes 11 years! (Say what?) Time sure does fly guys, and I can’t believe that we have almost been married over a decade! (Crazy town!) In addition to it being our anniversary month, another reason I happen to love May is because of Cinco de Mayo and because I love any excuse to drink margaritas and eat chips and salsa! Who’s with me? My refreshing hibiscus margarita is just the cocktail you need to kickstart your May off right and to celebrate Cinco de Mayo the right way!
It’s Monday which means busy mornings are in full swing around here! One of my favorite ways to survive the morning is to have a freezer and fridge stocked with easy breakfasts! I have a kiddo who wakes up asking what is for breakfast before I have even fully opened my eyes and so having a breakfast I don’t have to think about is a lifesaver! Things like mini frittatas, muffins, and waffles are just a few of the recipes I like to have on hand at all times! Lately I am so obsessed with blueberry everything and just can’t seem to get enough! I created these double blueberry waffles on a whim one weekend and have been making them ever since!
I’ve been thinking of doing a series on grilling this summer because it seems to be a cooking method that a lot of people are intimidated by, when actually it’s quite simple! It just so happens to be one of my favorite ways to prepare food! I love that I can literally throw anything onto the grill and make my whole meal without even turning my oven on, especially when I don’t want to heat up my house in the hotter months! It truly makes easy weeknight cooking that much easier! My grilled lemon, shrimp, and asparagus orzo salad is one of those easy meals that can be prepared on the grill and is perfect for any night of the week or for a weekend BBQ!
