I made this Easy Panko Crusted Cod Fish last week on Instagram and I had an overwhelming response of people wanting the recipe for it! I can see why because not only is it delicious, but it could not be any easier to make (fifteen minutes easy to make). It was one of those recipes that I made by accident a few months back that turned into one of my favorite fish recipes! It’s my go-to weeknight meal lately and even my three year old gobbles his fish right up! It can be easily served with your favorite vegetable of choice to make a super simple and healthy meal that can be made on even the most exhausting of days! This easy panko crusted baked cod fish is going to be your new favorite way to serve fish up to your family!

A few weeks ago I met up with my fellow team members of #TeamNosh in Colorado for our first ever retreat where we all got to hang out (some of us for the first time in person)! I’ve always been a fajita girl when it comes to ordering out at a Mexican restaurant, while my hubby for a long time was more of an enchilada kind of guy. (I converted him to love fajitas so we could share…wink wink.) I love enchiladas too don’t get me wrong, but I tend not to order them out because I feel like they are one of the less healthy options for me to get, and you already know I am not sacrificing the chips and salsa or the margarita! You get what I’m saying here? To compromise, one of the things I like to do with dishes that I love is to recreate some of my favorite restaurant style dishes, that may not be as healthy, at home so that I can have control of the ingredients while still satisfying that craving! My Chipotle Chicken Skillet Enchiladas are just the kind of dish that you would order out at a restaurant, but can be made right in your own kitchen!

I have a love hate relationship with the time change. On one hand I love more evening light, but on the other hand it takes me a week or two to adjust to not feeling behind from the time I get up in the morning!
