Yesterday was one of those days in motherhood where you question your sanity. Maybe you find yourself hiding in a closet for ten minutes so you can have a moment to breathe alone, or maybe you raised your voice and have a bit of mom guilt because of it. Maybe you aren’t a mom, but you had one of those days too where you just couldn’t wait for bedtime so you could wake up to a fresh new day. Either way, I feel you. Whenever I have a day like this, baking is something that brings me happiness in the midst of whatever chaos is going on. There is something so therapeutic about measuring and whisking and then smelling warm sweet goodness enveloping your home like a great big hug. I find that when I involve my son in the baking it instantly changes his mood too, it’s the ultimate distraction with the end result being so delicious. (Win-Win) My whole wheat zucchini tahini bread is our new favorite treat to make whether or not we are having a rough day and you are going to love it too!
We are three weeks into January and the healthy meal planning is still going strong! I have absolutely loved seeing the recipes you all have been making and how much you have been enjoying these meal plans! We are going to close out the month strong with some more of my favorite recipes to get you through the end of the month! Because you all loved the make it once, eat it twice or three times approach last week, I am including several recipes for breakfast lunch that you can do just that! I aim to make your life easier in the kitchen and I hope this meal plan does just that!
Happy Friday friends! Has this been a long week for you? Because it definitely has been for me! Between Parks still waking up in his big boy bed during the night, the hubby working late a few nights this week, and my own work, I have been counting the days until the weekend and a lazy Saturday morning! To me there is nothing better than a weekend morning where you don’t have to rush out the door and can make a special breakfast that can be enjoyed by the whole family! My chocolate chip pancakes with a blood orange chia syrup are going to make your weekend just a little bit sweeter!
We successfully made it through week one of the meal plan and I am starting to feel like myself again! Slowly but surely I am starting to get my groove back in the kitchen and I hope you are too! I absolutely loved getting messages from y’all last week about how you were loving week one of the meal plan and I think you are going to love this week just as much! I am a firm believer in the fact that you don’t have to give up your favorite foods or eat just salads when eating healthy! Instead I believe in eating real foods that are homemade with no yucky ingredients that will leave you feeling satisfied and happy! Sound good to you?
For the first two weeks of January I was having a hard time getting out of holiday mode and back on track with regular everyday life. I talked to so many people who felt the same way this year and finally this week I started feeling like myself again in all aspects of my regular routine. I got back to eating real food, moving my body daily, and most importantly I got my work mojo back! One of the ways I like to stay on track is by starting my day off with a healthy and filling breakfast that gives me energy to power through the day! Oatmeal is a great way to start you day and you can add just about anything you want into a bowl and make it work! My golden milk overnight steel cut oats are a great way to ensure you have a nutritious breakfast any day of the week!
