Sunday we are heading to Boston and Maine for a a little getaway (baby free y'all)! We are definitely planning to eat all of the yummy things along the way including as many lobster rolls as will fit in my belly. This week however we have been eating extra clean in preparation for our indulgences next week, but that doesn't mean that you can't enjoy a little treat just because I am eating low carb and sugar for the next four days! Life is about balance and my easy homemade peach cobbler is the perfect dessert to make before peaches and summertime disappear right before our eyes!

Being a mom sometimes means being super woman it seems. There just aren't enough hours in the day to do everything we are "supposed" to be doing. Between keeping up with a toddler whose mood changes from one second to the next, running errands, getting my work done, and trying to find a moment that I can have to myself, I'd be lying if I said dinner didn't sneak up on me from time to time! This just adds to the crazy that is motherhood which is why I make my life a little easier and keep Red Baron pizzas in the freezer for hectic days where I need an easy dinner! I like to whip up the ultimate Italian sub salad to pair along with a couple of pizzas for a quick and tasty meal the whole family will devour!
This week has been a dreary one guys. Rain every day and also forecasted for the foreseeable future! Whomp whomp. I just couldn't live in a place without lots of sunshine because I would eat all the things and take way too many naps! This kind of weather makes me crave comfort food of all varieties and since I grew up in Tennessee, a serious comfort food for me is homemade fried chicken! That's why you have to try my delicious homemade Nashville hot chicken anytime you are craving something comforting, a little decadent, and utterly mouth watering!

I cannot believe that summer is coming to an end and school is already back in session in some states! Here in Texas it is just starting back and I know that snacks are one of the most important things to have on hand when kiddos get home from school and are starving! Having healthy snack options ready to go and that are easy to whip up are so important in our household, because otherwise Parks will end up eating something that maybe isn't the best for him when the hangry hour hits! As a working mom my days are packed full. I am always looking for ways to get more done in a days time all the while staying healthy and taking care of myself. Back to school might be right around the corner, but that doesn't mean summer (or it's temperatures) are going anywhere anytime soon! My favorite childhood popsicle flavor has to be a dreamsicle because it basically has ice cream in the middle which combines the best of both worlds. My peach dreamsicle pops with goat cheese and thyme are a delicious twist on a summertime classic and you have to try them out!
