It is so hard for me to believe that it is already November.  October disappeared so quickly, but I am excited for what is to come for the rest of the year!  This happens to be my most favorite time of the year for so many reasons!  The food, the family, the friends, the gatherings and oh yeah...did I mention the food?  I think that during the fall, everyone needs a good snack mix recipe to bring to get-togethers, give away as gifts, or just to keep on hand!  My easy garlic ranch popcorn snack mix is going to be a hit in your house and is made super easy with McCormick Garlic Ranch Seasoning!

Homemade Vanilla Cinnamon Almond Butter

Happy Monday friends!  We had a big weekend including a book signing for my new cookbook First Bites, as well as Parks turning two!  First of all, someone please tell me how in the world I have a two year old now?  They say you blink and your kids are grown and I believe it!  I could get emotional if I think about it too much so let's move on shall we??  We spent the day yesterday just the three of us, doing all of Parks' favorite things, which now includes playing with his new train set!  Playing with trains works up an appetite you know...so birthday nibbles were a must!  We started the day off with pumpkin donuts (hello October) and rounded out the day with homemade spaghetti and meatballs!  Hands down our favorite snack of the day was sliced apples dipped in my homemade vanilla cinnamon almond butter!

I cannot believe that summer is coming to an end and school is already back in session in some states!  Here in Texas it is just starting back and I know that snacks are one of the most important things to have on hand when kiddos get home from school and are starving!  Having healthy snack options ready to go and that are easy to whip up are so important in our household, because otherwise Parks will end up eating something that maybe isn't the best for him when the hangry hour hits!  My easy yogurt bark is the perfect snack to keep prepared in the freezer to fill up little bellies with something that is nutritious and that tastes great too!

Somehow the summer is already almost over, which means school is about to start back up.  As a mom, you are either really excited about this or you are the opposite and are getting really sad about your kiddos getting back in the swing of things.  Or if I had to guess, you are probably somewhere in between.  One thing is for sure and that is that you are going to need easy recipes to whip up for after school snacks and easy dinners!  My back to school cereal crusted baked chicken tenders are going to be your new favorite recipe to make for your kids any day of the week!

Cacao "Chocolate" Hummus

Today I was supposed to be at the gym at 8:30 for my favorite class, but Parks decided that this was a good morning to sleep in.  I don't have the heart to wake him, so I will have to do a self-workout at the gym today, which is totally fine.   He is definitely going through a growing spurt I think because he has been sleeping a lot lately, which is A-okay by me!  Of course he would never sleep until 8:00 on a weekend day because that would be too perfect right?  It would be just  about as perfect as my Cacao "Chocolate" Hummus that is made with all good for you ingredients!  This slightly sweet and chocolatey hummus makes for the absolute perfect snack or toast topping!

Cherry and Vanilla Yogurt Granola Pops

Okay so I just realized that all of my last recipes have been all about fruit.  I guess that's because the heat index in Houston has been 104 degrees lately and fruit is my favorite snack of choice when it is hot outside!  The fruit that is produced at this time of year is one of summer's greatest qualities if you ask me, and they just so happen to be all of my favorites!  Right now I'm all about sweet cherries and have been eating them in my smoothies, plain-jane by themselves, and even in popsicles!  My cherry and vanilla yogurt granola pops are healthy and delicious and, the best part, they are perfectly suitable for breakfast!
