Kale, Grapefruit, and Fennel Salad with a Citrus Za'atar Dressing

This delicious winter kale salad is one that takes the boring out of salad and will have you excited to dive right into this bowl. I recently had a salad over the holidays that inspired me to make my own version of it right in my own kitchen. This salad is healthy, full of flavor, texture, and couldn’t be prettier. I am obsessed with the dressing that uses one of my favorite seasonings, za’atar and has a hummus base that makes for a creamy dressing that is so good to have on hand in the fridge for any salad or veggies throughout the week that you might eat. This kale, grapefruit, and fennel salad with a citrus za’atar dressing is one that you will be making over and over again.

Summertime salads happen at least a couple of times a week at our house because when the weather is this hot outside, turning on the oven just isn’t an option. There is one salad in particular that we have almost weekly and that’s a classic Cobb salad. I have several different versions of Cobb salads that I have shared with you before, but for some reason I have managed to forget to share the one recipe that started them all. There is something so good about the mix of ingredients in a Cobb salad and I love making my homemade ranch dressing to serve with it. This is salad that got my son eating salads again so you know that it is delicious! Honeydew Cucumber Salad

Summer melons are one of the reasons that this is my favorite season of them all. I stock up on all varieties when I am at the store each week and honeydew melon is the one that I tend to buy less often for some reason. I am not sure why because it is actually my husband’s favorite variety of them all. I decided to whip up a new fresh and healthy summer recipe using honeydew as the star ingredient. I have always been a fan of fruit in a salad, especially when you mix a little heat in with the cool fruit because it just is a magical combo. Chickpea BLT Salad with Cilantro Dill Yogurt Dressing

With Spring on the brain, I am suddenly in the mood for all sorts of salads and color on my plate! It has been unusually cold here this week in Texas, but that does not change the fact that I have been day dreaming about sunny Spring days that are in the very near future! While wintery meals tend to be more laborious, I love how with the switch of seasons, meals become more simple and effortless.
