I am not good about meal planning over the weekend. I think it's because that part of my brain turns off when Friday rolls around. So Monday for me is when I plan out my week and figure out all of our meals. One thing is for sure when I am planning, and that is all of the meals have to be EASY and relatively fast too! I recently did a round-up of my top ten easy weeknight meals, and this recipe that I am sharing with you today could easily get added to that list! My spiced citrus fennel braised chicken thighs and carrots should most certainly be added to your weeknight dinner rotation!
After a weekend where I indulged in a few too many tacos, because Cinco de Mayo and all, I am definitely craving some lighter dinners this week. We tend to have salmon almost every week and I am always looking for new flavor combinations to switch things up so we don't get tired of eating it. Recently I have been slightly obsessed with miso, so I decided to make a marinade for the salmon that highlights the delicious miso flavor that I am loving so much! My easy miso glazed salmon is the perfect healthy weeknight dinner served alongside your favorite veggie for a super quick and delicious meal!
Raise your hand if you cook chicken at least once a week? (Me!) I am raising my own hand because we have chicken on the regular at our house. I love buying whole chickens because you get more for your money and then you end up with white and dark meat, which in my house is a good thing because everyone wants something different! This always usually means leftovers are an option and I can turn them into a whole other meal! Talk about cost effective! The problem with chicken is that I can get burnt out on it and I'm sure you do too! April has been an odd month for me, not in a bad way, just really busy! I was out of town, my mom came in town, and now tomorrow I go back out of town again! And now tomorrow, I am headed to Los Angeles for my first ever blogging conference and I couldn't be more excited! I cannot wait to connect with my fellow peers and I know I am going to learn so much! If you saw my Instagram, then you already know my office space got a revamp, so I am super pumped about going to this conference and coming back super inspired and ready to work! And the reason I am telling you all about my travels this week is because when schedules get busy, dinner needs to be simple and if it can be healthy to, even better! My simple pork and spinach miso ramen is to the rescue!
You guys know by now that easy weeknight dinners are my jam. I love sharing them with you and they are a necessity in my life and probably yours too! Nothing makes me happier than having a home cooked meal on the table for my family almost every night of the week, but if it takes too much effort or too much time, then it just isn't going to work on a weekday! Happy Monday! How was your Easter weekend? We had family in town and the kids dyed eggs, ate their weight in candy, played in the mud, and just had the best weekend together! Yesterday I am pretty sure that 90% of Parks' diet was sugar and I wasn't far behind him! So now that Easter is over and my excuse to eat candy is no longer valid, I am meal planning for the week and I am all about preparing light meals that the whole family will love while keeping me on track! My sloppy joe stuffed peppers are just the kind of meal that is super satisfying while being low carb and healthy at the same time!
