Homemade Cherry Nutella Ice Cream

Homemade ice cream guys.  It's what summer should be about!  Remember back in the day when you had to use rock salt and churn it by hand and it required so much effort?  Yeah, ain't nobody got time for all that these days, even if it is still the best homemade vanilla ice cream I've ever tasted.  With today's ice cream maker's you can literally have ice cream with the flip of a switch and it taste amazing!  I honestly love making my own ice cream flavors.  It's so easy, and really does taste better than anything you can buy in the store!  My homemade cherry Nutella ice cream is an absolute must have ice cream flavor for this summer and you need to make it!

I mean hello, it has Nutella in it, which I am pretty sure you could put on a rock and I would try to eat it.  I actually started making a Nutella ice cream about two summers ago and it's still mine and Canean's favorite easy flavor to whip up.  And since fresh fruit like cherries and strawberries are transformed into a dessert with the dip of Nutella on them, I figured that cherries would be the perfect fruit to add to my original recipe!

Fresh Berry Salad with Whipped Cream

It's hard to believe that June is almost over and it's already time for July 4th!  This year is speeding by and just like that we are halfway through the year.  Before you know it Halloween will be here and then Christmas...which is maybe a little dramatic, but seriously it will be here in the blink of an eye!  Do you have big plans for the 4th?  We have friends coming into town and will probably find some fireworks to watch, head down to the water for the day, and of course will be eating lots of yummy food (duh).  One item that will be on my 4th of July menu is my fresh berry salad with whipped cream for dessert!  It's the easiest, no bake dessert and you don't have to feel as bad about eating it either!

After all, we will all be indulging a little more than usual with all the BBQ and celebrating that will be happening over the course of the weekend, so it's kinda nice to have a light dessert option!  Berries are still gorgeous just about everywhere right now and to me, they just go with the 4th of July!

Mango, Coconut, and Lime Pops

Why we don't all make our own popsicles I have no idea.  They are the easiest summertime treat you could ever make and the flavor options are endless.  Have fruit that is getting too ripe?  Make popsicles.  Bought too many berries at the market?  Make popsicles.  You don't even have to have a reason!  The point here is,  I think we should all commit to making popsicles all summer long.  I have had a sweet tooth for the past two weeks like nobody's business.  I knew I needed a treat that I could grab at night to keep me from eating ice cream every night...enter the popsicle.  My mango, coconut, and lime pops are just the healthy treat I needed to satisfy my sweet cravings!

Have you ever looked at the ingredients on the back of most popsicles in the store (unless you buy organic)?  It's all sugar, high fructose corn syrup, and a whole bunch of other stuff I can't pronounce.  And if you do buy organic the popsicles are about six bucks for six popsicles...are  you kidding?  I would go through those too fast and definitely wouldn't be sharing with Canean.  I get kinda stingy with my treats for me and baby.  Don't judge me.

Honey and Beet Frozen Yogurt

Um...so we started watching House of Cards last weekend and found ourselves glued to the couch for about seventy-five percent of the past three days.  Addictive is an understatement, and I am both sad and glad that we finished season three yesterday after a week and a half of watching! I'm glad because now I can get on with normal life without obsessing about what Frank and Claire Underwood will be up to next.  If you haven't watched it yet, you should...but just know that nothing productive will happen until you finish all three seasons.  Luckily I made my honey and beet frozen yogurt ahead of time, saving me from eating an unhealthier sweet treat while we watched the drama unfold.

Yep, you heard correctly...that's beet frozen yogurt.  Don't think I'm crazy.  If you are a beet fan, you are going to love turning them into something sweet!  When beets are roasted they get caramelized and their natural sweetness shines through making them the perfect candidate to be turned into a unique frozen treat.

Pineapple Sorbet Wine Cooler

We were watching Anthony Bourdain: Parts Unknown the other night right before we went to sleep.  He was in Chile eating the most gorgeous food, exploring gorgeous land, and drinking to his heart's content.  I was half asleep, half listening and watching when all of the sudden I caught a glimpse of the most refreshing looking drink I had ever laid my eyes on.  It was simple, no fuss, and genius!  A two ingredient cocktail that I will be thinking about until after I have this baby, but for now I wanted to introduce it to you!  Pineapple sorbet and crisp white wine come together to create my version of the magical drink I saw on TV that I am calling the pineapple sorbet wine cooler.

Who remembers wine coolers?  I can't believe I used to drink those overly sweet, give you a headache the next day fruity drinks.  Well never fear, this cocktail is nothing like your memories of any wine coolers that you have ever tasted before.  This one is not too sweet and is what summertime happy hours are made of.

Whole Wheat Grapefruit Olive Oil Cake

It's Monday...I think it's only fair that we get to eat cake today.  The weekend flew by again and here we are back to reality with the dreaded sound of our alarm clocks.  But if there's cake...that's reason enough to get out of bed don't you think?  Don't worry if you don't have time in your Monday to whip up a cake because with Valentine's Day quickly approaching, my whole wheat grapefruit and olive oil cake would be the perfect addition to your breakfast in bed or Valentine's lunch.  

I say breakfast or lunch because this cake is not overly sweet.  I actually enjoy mine with a cup of coffee in the afternoon for a snack or sometimes for breakfast too.
