Summertime salads happen at least a couple of times a week at our house because when the weather is this hot outside, turning on the oven just isn’t an option. There is one salad in particular that we have almost weekly and that’s a classic Cobb salad. I have several different versions of Cobb salads that I have shared with you before, but for some reason I have managed to forget to share the one recipe that started them all. There is something so good about the mix of ingredients in a Cobb salad and I love making my homemade ranch dressing to serve with it. This is salad that got my son eating salads again so you know that it is delicious! I cannot believe August has arrived and back to school has already started! Where did the summer go? But let's be honest, summer actually isn't over yet is it? The heat is still sticking around and we still have a good month or two left of some of my favorite summer produce! Last week I made a random salad based upon what I had in the fridge, and omg guys...it was one of the best salads I have made in a long time! I knew that I was going to have to make it again, and that I needed to let you guys in on this amazing salad combination too! Summer is right around the corner and it's my favorite time of year for produce! Tomatoes in particular are at their peak and can most definitely shine on their own during this time. I love creating simple dishes when ingredients are so good that they just don't need that much more added to them! When BBQ season and outdoor entertaining are in full swing, I love bringing lighter and healthier dishes to the table to balance out the rest of the spread. My new favorite dish that I will be making all summer long is my garlic and dill tomato salad with cornbread croutons!
I don't know about you, but when summer rolls around the last thing that I want to do is use my oven in any capacity. The air conditioner is already running 24/7 to keep the house at a reasonable temperature, and the last thing I want to do is add any heat to the mix! I am all about easy summer salads that I can grill up a protein to pair with it and call it done-so! How was your holiday weekend? We had a great weekend celebrating our anniversary and enjoying an extra day together yesterday for Memorial Day. One thing is for sure, we had a cheat weekend, indulging in whatever we wanted in the food department. Did anyone else out there have a weekend filled with burgers and ice cream? Well we did, and today we are back to eating healthy, trying to make up for our glutenous past couple of days. Memorial Day in my mind kick starts summer. I immediately start thinking about watermelons and ice cream cones on a hot day. And since I do not need to be eating ice cream cones every day, watermelon is my next favorite summertime treat.
Summer is my favorite season. Yes, it's dreadfully hot, dry armpits aren't an option, and makeup runs off my face, but there is something about the time of year that makes me so happy. I love the flush in my cheeks, the sound of lawn mowers running, the nightly smells of grills around the neighborhood, and most of all, my favorite fruits come into season. One of my favorites since I was a little girl has always been the peach. When they are sweet I could eat them by the dozen. I put them in drinks, eat them alone for a snack, make marinades, and love throwing them into salads. And speaking of salads, my peach caprese salad is my current lunch obsession and I can guarantee you that it will keep your tummy happy all summer long.
I'm aware it's not officially summer and that peaches aren't actually in their prime just yet, but remember I'm pregnant and when I set my sites on something food related...well there is just no turning back. I took one sniff of a peach at the grocery and I was a goner. I have been eating them for three weeks now and can be spotted eating at least two a day.
