Pizza night is a regular occurrence in this house and I love switching up flavors to based on what I have in the refrigerator and what is currently in season. Fall is the time when all squash varieties become abundant and I find myself with multiple varieties on hand at all times trying to decide how I will cook them up. Personally I love them just roasted with olive oil, salt, and pepper, but from time to time I like to switch things up. Using roasted squash varieties on salads, in pastas, to make sauces etc is a fabulous way to “fall-ify” any dish! Last night we went to the Houston Rodeo and after almost three years of living here, can officially call ourselves Texans! We ate turkey legs, sausages and peppers, drank some really cold beer, saw livestock, the rodeo, and finished the night off with a little live music and The Zac Brown Band. I don't think we have ever had a Monday date night, but it sure was fun to get out for the night and go experience a quintessential Texas tradition! I am a little slow moving this morning as I get going, and I am going to be all about seriously quick and simple eats today! My easy lox and herbed cream cheese naan pizzas are just the thing that I want to eat on a morning like this!
Happy Monday! This week is a super busy week for me! We have Parks' follow up doctors appointments for his kidney (please say prayers that everything is healing just the way it should) and I have so much to do before leaving to go to Baton Rouge for the Louisiana Book Festival to do my first ever cooking demo and book signing!! I am excited and nervous...and more excited. In addition to this week being super busy, the weather has shifted and it no longer feels like fall...whomp whomp. Don't worry though, to keep myself in the fall spirit, I am cooking with all the fall flavors I possibly can! My apple, bacon, and pumpkin pan pizza with caramelized onions is seriously so delicious and screams fall in the best way!
It's national pizza week. Did you know that? Because that is kind of important if you ask me. It's basically an excuse to eat pizza and forget about your new year's resolutions, or not in this case. My roasted tomato and lamb pizza with mint pesto is not only to die for, but it is really pretty good for you too! How's that for having your cake and eating it too?
I love pizza, like loooove it. I could eat it everyday if my hips would allow me to. It is just so good in every way. It's comforting, it's usually what we eat for dinner on a rainy and cold night, and let's be honest here, is anything with bread and cheese bad? For me, it's all about the crust. Canean will sometimes leave his crust on his plate, only to find it disappear by yours truly. Sometimes I give it to the dogs, but that all depends on the level of greatness that the crust is.
Can we talk about how there are few things in the world better than a good slice of pizza? It ranks right up there with a great kiss, puppy breath, and realizing that top you have been wanting from Free People just went on sale. We have been known to have pizza night once a week because lucky for me, I married a fellow pizza connoisseur who is equally obsessed. And I'm about to change the game on your regular ole pizza with my farmer's market smoked sausage and corn pizza!
Y'all...holy cow was I surprised at the flavor combination the first time that I made this pizza. It was love at first bite. I knew I had to make it for you and share the recipe because one shouldn't keep this kind of deliciousness to themselves.
I do have a confession though...I tried a new technique because I read a fellow blogger who did this and thought hey that's genius...and maybe it is, but I did not feel so genius after trying it. I put my pizza stone right on my grill to recreate a wood burning oven effect and instead broke my pizza stone right in half (sigh). It seemed so brilliant, maybe it was just my stone...or maybe it was just me.
