We had the best weekend guys. The weather was gorgeous, we hung out outside literally all day on Friday and Saturday and it was just one of those perfect weekends that you don't ever want to end. I am always excited for a new week/fresh start, but I have to say that I am a little sad to see this particular weekend come to a close! However, with a new week and fresh start, we also get back to our favorite weekly recipes that are healthy, full of nutrients, and keep us going all day long! We usually rotate through a few favorite weekday breakfasts, but one recipe that I continue to make over and over is my blueberry vanilla oatmeal!

Starting my morning out right is key to any productive day and having a healthy on-the-go breakfast is just the way I like to ensure that happens! Mornings can feel rushed and that's why I love prepping my breakfast the night before so I have an easy option to grab and go! One of my favorite ways to do this is by whipping up overnight oats for the week and packing them with only the good stuff my body needs to make it through any busy day! My trail mix overnight oats are my new favorite overnight oat combination that will keep you satisfied and energized through lunchtime!
You guys, last weekend I went a little fall crazy in the kitchen. I am so ready for all things fall-like, I just can't stand it. The heat here is sending me mixed messages, but I have decided that it's going to be fall in my kitchen regardless of the weather outside. I ended up with a bunch of mealy apples from the grocery last week, which is always a bummer, and wanted to make something with them since they aren't good to eat alone as a snack. My pregnant brain heard the words apple and butter at some point last week and I decided I would whip some up with what I had in the pantry, including my mealy apples. The verdict is in! It's so easy to make you own apple butter in the slow cooker that I am never spending money on buying it in the store again. I made apple butter and then put it in my oatmeal for some serious yummy breakfast vibes and I am dishing on both today!
Soooo...how was your Valentine's weekend?! I hope it was filled with lots of chocolate and things that aren't good for you! Ours was good, Saturday during the day we were both kind of busy, but we did manage to sneak in dinner together on Saturday night. And Sunday we ate waffles, took naps, and then filled our bellies with pasta before calling it a night. I know what you are thinking...we are pretty wild and crazy right? It was kind of my perfect weekend, I have to say. But now Monday is here and it's time to be healthy and productive and all that other grown up stuff. Luckily I have a big batch of my almond granola made up so my breakfasts will be a no brainer and that's just one less thing I have to worry about during the week!
I can't tell you how obsessed I am with this granola lately. First let me state that I am almond crazed. I love anything with almond flavoring in it.
I'll be honest, I am not typically an oatmeal person in regards to eating a bowl for breakfast. There are just other things I would rather eat. I always have good intentions to be an oatmeal breakfast eater, but every time I try, I am not satisfied and end up being disappointed that I didn't just eat something else for breakfast. At this point the calories have been consumed and I have to move on to being excited about lunch. However, my savory oats with parmesan and olive oil were a game changer for me and I think you are going to love them too!
