Happy Monday friends! Let’s start the week out with lots of veggies and gorgeous Spring goodness shall we? I was out of town last weekend and am need of all the veggies in my life and a salad full of all of my favorite Spring produce is just what my body is craving! The good news is, salads don’t have to be boring! In fact they are the perfect way to combine some of your favorite flavors and ingredients into one bowl! Right now I can’t get enough of strawberries and asparagus and together they make a lovely combo, believe it or not! My roasted asparagus strawberry herb salad with tahini honey mustard is sure to take your weeknight salad to a whole other level!
I cannot believe August has arrived and back to school has already started! Where did the summer go? But let's be honest, summer actually isn't over yet is it? The heat is still sticking around and we still have a good month or two left of some of my favorite summer produce! Last week I made a random salad based upon what I had in the fridge, and omg guys...it was one of the best salads I have made in a long time! I knew that I was going to have to make it again, and that I needed to let you guys in on this amazing salad combination too! My grilled bbq chicken and peach salad is the quintessential summer salad and it needs to be on your dinner table asap while the gettin' is good!
This week started out a little crazy because I had to finish all of my cookbook edits for Baby's First Bites (which will be released in the Fall in case you didn't know!) I mean, it's only Wednesday, but I am positive it should be Friday already. Do you ever have weeks like that? Well this week is one of those for me and easy is the name of the game for all things in the kitchen. I haven't had the time or the energy for anything but easy recipes and one of my favorites go-to's is the best house salad that you will ever make at home!
The weather here in Texas has been very Spring like lately which has been fantastic because we have been soaking up the high seventy degree temperatures almost every day! I am a little fearful of what that means for our summer, but I'll take this window of perfect weather while I can. I am definitely ready to say goodbye to winter's heartier meals and say hello to Spring's fresh and light recipes that make me feel better as a whole! For me this means lots of fresh produce, lean proteins, and breaking out my grill more regularly! You probably are aware by now that I have been known to grill in rainy and cold weather, but there is something so much better about grilling on a sunny and warm evening or afternoon. My grilled chicken Greek salad is my new favorite that I have added into our weekly dinner rotation and you are going to love it too!
Happy Monday guys! How was your weekend? Ours was so great and spent mostly at home just hanging out. It was perfect and as always, went by too fast! I am also hitting the reset button on in the meal department because this weekend I definitely ate too many pumpkin bars and some of that lingering Halloween candy that needs to go. To get back on track, I am whipping up my healthy butternut squash, apple, and kale salad with spiced pecans to eat all week long!
