Ground Pork Taco Bowls

Times are certainly different these days and that means our methods of cooking have altered slightly since we are making our groceries last as long as possible. Pantry cooking has become more important than ever as we are all staying home more and I am all about making meals out of ingredients that I already have on hand. One of my favorite proteins to keep stocked in my freezer is pork which is why I have partnered with The National Pork Board to create a family friendly dinner that is cost effective and can be made with ingredients that you already have in your kitchen. Taco bowls are one of my favorite go-to dinners when I want to whip up a nourishing and comforting meal for my family and I love that I can swap ingredients based on what I have on hand each week. My ground pork taco bowls are made with ingredients that I always have stocked in my fridge and pantry and are so delicious and satisfying.

Easy Pantry Staple Meals

Being able to create meals from pantry staples has always been something that I think everyone should learn to get comfortable doing, but now more than ever we are all hitting up our pantries to create meals for our families more regularly while we try and keep our grocery store runs to a minimum. That means thinking outside the box to provide a little variety to our families while using things like canned tomatoes, beans, pastas, and other canned goods we have on hand. I am breaking down the most common pantry items and giving you some recipe ideas for each so that you can continue to feed your family delicious food while staying home and using ingredients that are in your pantry and fridge. Chipotle Chicken Skillet Enchiladas

I’ve always been a fajita girl when it comes to ordering out at a Mexican restaurant, while my hubby for a long time was more of an enchilada kind of guy. (I converted him to love fajitas so we could share…wink wink.) I love enchiladas too don’t get me wrong, but I tend not to order them out because I feel like they are one of the less healthy options for me to get, and you already know I am not sacrificing the chips and salsa or the margarita! You get what I’m saying here? To compromise, one of the things I like to do with dishes that I love is to recreate some of my favorite restaurant style dishes, that may not be as healthy, at home so that I can have control of the ingredients while still satisfying that craving! My Chipotle Chicken Skillet Enchiladas are just the kind of dish that you would order out at a restaurant, but can be made right in your own kitchen!

Easy Chicken and Dumplings

If you all know anything about me by now, you already know that I pride myself on creating easy recipes that can be cooked from start to finish in under thirty minutes! I’m a working mom, and I know how hard it can be after a long day to come home and think about getting a dinner the whole family will love on the table quick! That’s why I partnered with Campbell’s® to create an Easy Chicken and Dumplings recipe using their Campbell’s® Condensed Cream of Chicken Soup that can be ready in a hurry!

During this time of year, I am all about warm and cozy meals that bring a family together after a long day of work, school, and busy schedules! Dinnertime is a time to come together, talk about the day, and enjoy something delicious to nourish and comfort! Soup is one of those dishes that I think is the ultimate food hug, and the warmth of Campbell’s soups brings people together every time!

My easy chicken and dumplings is one of those recipes you will want to make week after week! With the help of a versatile recipe starter like Campbell’s Condensed Cream of Chicken Soup, you can take a few shortcuts to cook up the ultimate chicken and dumplings any night of the week!  

With just thirty minutes and ten ingredients, you can make this chicken and dumplings after even the most exhausting of days! These chicken and dumplings have an incredibly flavorful broth and are loaded with tender chicken, veggies, and fluffy dumplings that will warm your heart and your hands, guaranteed!

I can’t wait for you to try out this recipe for yourself! Tell me, is there really anything better than family and a delicious meal?  

Ingredients:

  • 1 Rotisserie Chicken, deboned and skin removed

  • 1 Tbsp. Olive Oil

  • 3 Celery Stalks, diced small

  • 3 Carrots, peeled and diced

  • 1 Tbsp. Fresh Thyme Leaves (can sub dry thyme)

  • I 10.5 oz. Can Campbell’s® Condensed Cream of Chicken Soup

  • 6 Cups Chicken Stock

  • 1 Can of Regular Biscuits (not the flaky kind)

  • 1 Tsp. Salt + more to taste

  • 1/2 Tsp. Black Pepper + more if needed to taste

  • Fresh Parsley for garnish (optional)

Directions:

  • Heat a large pot or Dutch oven over medium heat.

  • Add oil, carrots, celery, and thyme to the pot and then season with 1/2 of the salt and pepper, 2-3 minutes.

  • Pour in chicken stock, bring to a simmer, and let cook for another 5 minutes.

  • Add Campbell’s® Condensed Cream of Chicken Soup to the pot and stir to combine.

  • Add chicken to the pot, bring to a low boil, and add in the rest of the salt and pepper.

  • While the soup simmers, cut each biscuit into 4 pieces and then roll into balls.

  • When the soup comes to a low boil, drop biscuits in one at a time and cook another 5 minutes.

  • Taste the chicken and dumplings and add more salt and pepper if needed.

  • Serve immediately or continue to let simmer on low until ready to eat. Serve with fresh parsley, if desired.

Note: Will store in the fridge for 3-5 days.

 Cozy and delicious, these easy chicken and dumplings are sure to become a family weeknight favorite!

Healthy Eating Meal Plan Week 3

We are three weeks into January and the healthy meal planning is still going strong! I have absolutely loved seeing the recipes you all have been making and how much you have been enjoying these meal plans! We are going to close out the month strong with some more of my favorite recipes to get you through the end of the month! Because you all loved the make it once, eat it twice or three times approach last week, I am including several recipes for breakfast lunch that you can do just that!
