Pizza night is a regular occurrence in this house and I love switching up flavors to based on what I have in the refrigerator and what is currently in season. Fall is the time when all squash varieties become abundant and I find myself with multiple varieties on hand at all times trying to decide how I will cook them up. Personally I love them just roasted with olive oil, salt, and pepper, but from time to time I like to switch things up. Using roasted squash varieties on salads, in pastas, to make sauces etc is a fabulous way to “fall-ify” any dish! This recipe for roasted delicata squash with prosciutto, and goat cheese pizza is quickly going to become your new favorite Friday night pizza tradition.

Happy October! It’s officially soup season if you ask me and even thought it’s hotter than fall should technically be here in Texas! We have had a very rainy start to the season which has been perfect for making my favorite soups and getting me in the mood for all things pumpkin and cozy despite the heat. I sure love summertime, but I also really love fall. There is something about the season that just feels comforting and homey right? October is the month that Parks was born, cooler temps hopefully show up, and my favorite holidays are not far away! To kickstart the month, I have rounded up my top ten favorite fall soups to help you get in the cozy kitchen mode too!
I have officially been bitten by the fall baking bug! Even though the weather here in Texas isn’t cooperating, I am carrying on with all of the fall recipes! Pears are one of those fall fruits that I feel like people forget about and honestly they are one of my favorites at this time of year! I obviously love them as a healthy snack all by themselves, but they are also fantastic to use in savory dishes and baked goods alike! My gluten free spiced vanilla pear bread is one of those fall recipes that you are going to want to make all season long!
My best friend lives in New York and there is this cookie place called Schmakary’s that has this oatmeal scotchie that is just to die for! Every time we visit, I have to go get one, and you will have to do the same when you go! It’s perfectly chewy, and the best combination of flavors and because I love butterscotch, there have been few cookies to ever top it for me! I don’t know why it has taken me so long to try and recreate a healthier version at home, but the good news is, I finally did it! My healthier oatmeal scotchies are perfect for after school treats, or just to have around when you sweet tooth comes knocking!
Somewhere along the way, my kiddo decided that he HAD to have a donut every time we were at the grocery store. I mean, I am all about a donut every now and then but y'all...I go to the grocery about 2 or 3 times a week! That is too many donuts for anyone in one week, especially because I try to limit the amount of sugar we get! So because of his new obsession with this very unhealthy food item, I decided to make us a healthier version at home! I love creating my own version of foods that are indulgent right in my own kitchen because I can control the ingredients! My healthy carrot cake donuts are perfect to make in advance for all week long and you can feel good about your family eating them!
