The summer is almost over, but that doesn’t mean that we still can’t enjoy all of the gorgeous summer fruits for a little while longer! I don’t know about you, but even though I long for crisp fall mornings, saying goodbye to all of my favorite melons, tomatoes, stone fruits, and cherries is not something I am ready for yet! One of my favorite ways to enjoy summer’s produce is to make a Caprese salad! It’s the most perfect summer dish that is so great for a light lunch or dinner all season long! Happy Thursday guys! One more day to get through until the weekend and I am already dreaming about refreshing cocktails because it has been getting hotttt y'all! And when the weather is hot outside there are only two things that sound good and those are being near a body of water and/or drinking a refreshing cocktail. Let's be honest, I'd prefer to be drinking a refreshing cocktail by that body of water, but I'll take either or right now! One of my favorite simple and refreshing cocktails is a screwdriver and I made it even more refreshing by creating a frozen version that is amped up in flavor! There's a tiny (and I do mean tiny) feeling of fall in the air here in Texas, and it has me way too excited about all things cozy and fall like. With the drop in humidity and temperatures, came my desire to cook comfort food and turn my stove back on over the weekend. I am not going to lie, I am already plotting Thanksgiving and Christmas menus, decorations, and more. I know I need to have this baby first...that's what you are thinking...but honestly I think his arrival is making my excitement even more so.
