Easy Pantry Staple Meals

Being able to create meals from pantry staples has always been something that I think everyone should learn to get comfortable doing, but now more than ever we are all hitting up our pantries to create meals for our families more regularly while we try and keep our grocery store runs to a minimum. That means thinking outside the box to provide a little variety to our families while using things like canned tomatoes, beans, pastas, and other canned goods we have on hand. The holidays are over and if you are like us, this week is the week to get back to reality, work, and school. That means regular schedules, meal times, and having to adjust to not being in relaxed holiday mode anymore. Chorizo Deviled Eggs

I grew up in Tennessee where deviled eggs were a staple at every pot luck or holiday table! More than likely there were a few varieties of deviled eggs at any given time, especially during Easter time! I love taking classic recipes that I grew up on and giving them new life with exciting new ingredients! Deviled eggs have endless possibilities as far as ways you can add different flavors to them and I created a deviled egg that is perfect for Easter brunch or to serve as an appetizer to Easter dinner! My chorizo deviled eggs are so delicious and easy to make and I can promise even people who think they don’t like deviled eggs will be raving about this recipe!

Open-Faced Egg Sandwich with Arugula Pesto

Did anyone else's weekend fly by?  I don't know why this comes as a surprise to me week after week, but it never fails every Sunday night I find myself moping around at the fact that the weekend is coming to a close again.  It's not even that Mondays are really all the bad for me.  They consist of meal planning, email responses, and shooting recipes.  All of which I don't mind doing one bit and one important step to my weekday productivity is always a good breakfast.  If I don't start out the day with a good meal, I can pretty much kiss my chances of my brain working properly goodbye.  My open-faced egg sandwich with arugula pesto is just the kind of breakfast that will fuel my day!
