Zucchini season is in full swing and I don’t know about you but every week I find myself with several zucchini staring at me in the fridge. I love buying a few extra zucchini each week because they are great to freeze to throw into smoothies and they are great for baking! Chocolate and zucchini are actually quite a common pair when it comes to baking and it’s a great way to add some veggies into a sweet treat that the whole family can enjoy. I created an olive oil chocolate zucchini snack cake that is perfect to make when you want a little treat when that afternoon snack attack hits!

I seriously cannot believe that Halloween is next week and then October will be over! This year is passing at a incredibly fast pace and while I am totally ready to put up my Christmas tree (ha), I also don’t want to rush these last months of the year! It finally feels somewhat like fall here in Texas, which at least makes me feel like it could be Halloween next week, and I am definitely embracing a little chill in the air! The weather has had me in a baking mood all week long and since the hubby’s favorite sweet treat is a cupcake, I made some scrumptious pumpkin cupcakes that needed to be shared with you! My pumpkin cupcakes with spiced cream cheese frosting are going to be on repeat in your kitchen all season long!
My best friend lives in New York and there is this cookie place called Schmakary’s that has this oatmeal scotchie that is just to die for! Every time we visit, I have to go get one, and you will have to do the same when you go! It’s perfectly chewy, and the best combination of flavors and because I love butterscotch, there have been few cookies to ever top it for me! I don’t know why it has taken me so long to try and recreate a healthier version at home, but the good news is, I finally did it! My healthier oatmeal scotchies are perfect for after school treats, or just to have around when you sweet tooth comes knocking!
Let's talk Thanksgiving guys because after all it's officially less than two weeks away! Are you hosting at your house, are you going to a family or friend's house?
