Homemade Beef and Vegetable Soup

Happy New Year Friends!  We have literally been out of town for almost a full two weeks and I am slowly getting back into the swing of things.  Not to mention that it is COLD here in Texas, which basically never happens, and I know what you northerners are thinking...it can't be that cold, but guys...the temp went down to 23 degrees last night!  I don't care where you live, that is cold, especially to those of us who are used to mild winters!  So while I am definitely hopping back on the healthy food wagon this week, I need some stick to your bones kinda food...because hello cold weather!  My homemade beef and vegetable soup is exactly the kind of meal that we all need in our lives right about now and you need to make it ASAP!

Easy White Bean, Smoked Sausage, and Kale Soup

The weather has turned only slightly here, but there has been a new crisp evening air that has me craving all things comforting for dinner.  Something somewhat healthy, that is warm and full of flavor is usually what I try to make!  Soups are so good for just that because you can make them ahead and eat on them all week for easy dinners and for the most part you can control the ingredients keeping them as healthy as you and your family want them!  My easy white bean, smoked sausage, and kale soup is just the kind of meal that I crave on a weekly basis!

Pork Pozole Rojo : My Diary of Us

Pozole Rojo with Pork

It seriously feels like forever since I blogged a recipe.  I am trying to get back into the swing of things now that all the recipes in the cookbook have been completed, and slowly but surely it is all coming back to me.  Getting back into a routine with not only work, but life in general has been much needed.  

I was on a roll last week with working out, eating right, and getting back to some kind of regimen and then bam that stratchy throat feeling came at me hard on Friday.  I knew it was coming and even though I tried to drink it away with ginger tea and vitamin packed smoothies, it just got worse.  Turns out it was a nasty sinus infection and I am finally feeling somewhat better after a few days on antibiotics.  I don't know about you, but when I don't feel good I crave soups non-stop. There is just something about the warm broth that makes me feel better instantly.  My pozole rojo with pork is just the kind of soup that I want when I am sick (or not sick honestly) and I think that you will love it too!

Spicy Roasted Tomato Basil Soup

The weather has turned here in Texas, and I am hoping it's here to stay!  The nights have been chilly, the days crisp, and I've been in the mood for all the soups.  I am one of those people who could eat soup on a hot summer day, but I don't make them as much because Canean is definitely not one of those people.  This gets me really excited for fall and winter when I can make as many soups as I want!  My spicy roasted tomato basil soup is one of those soups that will become one of your favorites that gets put on dinner rotation.  It's simple, healthy, and so full of flavor that you and your family are going to love it!

Easy Baked Ziti

Yesterday my morning started out kinda rough, and I was in a blah mood all day long.  Later in the afternoon, I was checking my email and I saw where I won an Ergo baby carrier from a blog giveaway! I never win anything, EVER, and was beyond excited because I had just registered for one and they run about 170.00.  It was just the pick me up I needed to change my mood for the afternoon.  Do you ever have days like that where you just have a hard time getting out of your funk?  If you are human, I am sure you do and there is nothing better at the end of one of those days than a big bowl of comfort food.   My easy baked ziti is just the sort of meal that will make you feel better in one bite.  

It's funny how food can do that, transform your mood after a long day.  It's one of the reasons I love to cook.  For me, it's healing and to be able to serve others a meal that makes them feel better too is such a rewarding experience.
