Zucchini season is in full swing and I don’t know about you but every week I find myself with several zucchini staring at me in the fridge. I love buying a few extra zucchini each week because they are great to freeze to throw into smoothies and they are great for baking! Chocolate and zucchini are actually quite a common pair when it comes to baking and it’s a great way to add some veggies into a sweet treat that the whole family can enjoy. It’s the time of the year where you can’t seem to walk out of a grocery store without running into a table full of girl scout cookies that are begging to come home with you. As we were driving back from Louisiana over the weekend, we stopped at a gas station and my hubby came back to the car with a pack of Almond Joys. They are 100% his favorite candy bar and so after I rolled my eyes at him (because my sweet tooth can't be stopped when candy is present) we all split that Almond Joy and I have to admit, it tasted amazing. But as I was eating it I was thinking about how simple it would be to make that same candy bar right in my own kitchen with minimal ingredients that aren't terrible for us to enjoy and then I wouldn't have to feel any guilt about satisfying my chocolate craving! Hallelujah it's Friday! This week has been dragging on and I have been waiting for today since Monday it feels like! I was out of town last weekend, so I am beyond excited to spend thia weekend with my guys. We have a pumpkin party that we are going to where there is a pumpkin recipe contest. I am pretty pumped about getting to make my famous pumpkin bars, as well as a new pumpkin dip that I am testing out too! Other than that, we have a whole lot of chilling on the agenda. I am about to get super busy with a new project that I can't wait to share with you so this will be my last weekend for a while not working. I plan on making pumpkiny things, a big batch of soup, and these super easy chocolate mousse cups and you should too!
