Citrus Shaved Brussel Sprout Salad with White Cheddar

Hi guys!  How was your weekend?  Ours went by too quickly, but was pretty great.  We celebrated the hubby's birthday this weekend with friends over nachos and margaritas and then spent Sunday being lazy and watching it rain.  I kind of love Sundays when it rains because it gives you an excuse to lay around and not be productive.  Unfortunately that can't last forever and Monday is inevitable, so let's make the most of it and start our week off right with a healthy meal that you will fall in love with!  You HAVE to make my citrus shaved brussel sprout salad with white cheddar.  It's my new salad obsession, and I can't wait for you to try it.

It will make you happy when you eat it because it is just that good.  I made this salad by accident for the first time and was blown away by the flavor combinations.  In fact I love it so much, that Saturday at the farmer's market I bought two bundles of brussel sprouts because one time eating this salad is just simply not enough.

Spicy Roasted Broccoli

Yesterday was my first day back on the health train.  Over the holidays I completely abandoned any sense of trying to watch what I eat.  I thought it was appropriate to eat sugar everyday sometimes even at breakfast and working out...what's that?  I had a reality check yesterday and gave myself a little pep talk about how that kind of behavior cannot continue into 2015.  After all, I'll be 31 next month and my metabolism isn't what it used to be!  I planned out meals for the week, exercised (ouch), and drank tons of citrus detox water, which will be on the blog Thursday!  This morning I woke up feeling ten times better from just one day of eating fresh!  Spicy roasted broccoli is one of my favorite go to healthy side dishes because it's full of nutrients, so tasty, and it might be the easiest dish to make, maybe ever.

When dinner rolls around you've been to work, possibly starting working out again, and by now it's pitch dark and the last thing you want to do is prep a big meal.  You need simple, you need fresh, it needs to taste good, and you need as few ingredients as possible.

Farmer's Market Pork and Collard Green Hash

Happy last week of 2014!  How was your holiday week?  Mine was pretty good despite the family stuff I had going on...lots of rest, too many sweets, and time spent with friends.  Thanks for all of the kind words and prayers that you sent to me, it really means so much...  This week is always hard because technically it's still the holidays, but we have to get back into our normal routines.   But at least we will have a mid-week break for New Year's to ease us back into reality.  Growing up we always had the same traditional New Year's Day dinner: pork of some sorts, collards, black-eyed peas, and cornbread.  And I of course still make it because superstitions or not, I don't want to risk it!  There are always leftovers with this kind of dinner and I have the best idea for a whole other meal. Farmer's Market Pork and Collard Green Hash is my new obsession for a seasonal hash and you have to make it!

When I went on the Maker's Route road trip, we stayed in the most adorable town called McMinnville in Oregon.  We ate breakfast at the same little cafe every morning and the first morning there we all partook in their Heritage Pork Hash, which consisted of tender pork, braised greens, a farm fresh egg, all over potatoes.  It was to die for.

Pepper Jelly Roasted Carrots

Okay people, Christmas is a week and a day away so we have to get serious about what's going to be on the table for Christmas dinner.  I am torn between a traditional Christmas dinner or full fledged Italian.  Decisions, decisions.  If I go the traditional route, which for me means a standing rib roast with a bunch of veggies served on the side, these pepper jelly roasted carrots will be making an appearance no doubt about it.

Canean loves carrots, like they are probably one of his favorite vegetables, raw or cooked.  Maybe he's part rabbit.  For some reason when I was growing up I didn't eat too many cooked carrots, I guess because my mom isn't that crazy about them.  I started making them myself more in a,  they go with a roast in a crock pot kind of way, and then got smart and started roasting them in the oven.
