Roasted Cornish Hens and Root Vegetables

I woke up this morning thinking it was Tuesday and to my surprise realized that it was Wednesday.  I love when that happens usually because it means the weekend is right around the corner, but in this case it just means that my days are passing too quickly these last two weeks here in Louisiana.  My days are packed full with lists, my work, and seeing as many friends as possible.  With full days like these I have been loving easy dinners that allow me to multi-task!  My roasted Cornish hens and root vegetables is the perfect meal to fix on those busy weeknights where you just don't have the time to babysit the stove!

You may or may not have cooked a Cornish hen before, but if you haven't I'm telling you they are just as easy as a regular chicken and are super tender and delicious!  Cornish hens are a certain breed of chicken and I love them because everyone gets their own bird where you get your white and dark meat all in one!  And even if you aren't usually a dark meat kind of person, the dark meat yes has more fat, but it also holds some serious nutrients that are especially good for women!

Healthy Shrimp and Corn Chowder

How was your weekend?  I hope that for those of you in the North, you got some extra blankets and some extra groceries for that snow storm that is coming!  I do not envy you!  It's going to be 65 degrees here this week...but I won't rub it in.  We were in Houston over the weekend, because in case you missed it, we are moving there and things just got REAL real!  We checked out some areas and potential houses to buy and of course ate things like Mexican food and got ice cream on our drive home yesterday...not the best end to my healthy foodspiration week...but today is a new day.  This week we will be eating things like salad and bowls of my healthy shrimp and corn chowder to get back on track! 

I love shrimp and corn chowder, and it might be Canean's favorite soup to eat!  But usually it is so packed with heavy cream and butter that I rarely indulge because quite frankly I'd rather spend my calories elsewhere than on one bowl of soup!  I figured it can't be that hard to make an at home version a lot healthier, so that is exactly what I did!

Healthy Foodspiration: What's Gaby Cooking

Guys, are we feeling healthier this week and more motivated to stay on track?  I sure am, but if you aren't that's okay too, but hopefully you are at least feeling a little more inspired in the kitchen!  We are on day three of my healthy foodspiration series, and today I am featuring Gaby Dalkin from What's Gaby Cooking and three of her favorite go-to healthy meals!

I got to know Gaby last year a little better when I interviewed her for the blog.  One of my favorite things about Gaby's recipes is the amount of color that is always on the plate!  She cooks with the perfect balance of health and decadence and uses the freshest ingredients, usually from her local farmer's market.

Gaby is originally from Arizona but now calls California home.  Her style of cooking has a Southwestern flair and her ingredient of choice is almost always avocados!

Kale, Grapefruit and Pepita Salad

This will be the first week in over a month that I will sleep in my own bed for more than five days in a row.  I have been to the west coast, to the east coast, and then immediately spent the weekend away in New Orleans.  My body is completely out of whack from not eating the right foods and not drinking enough water over the past month.  This week I have been on a mission to nourish and be kind to my body because it is SO not used to the mistreatment.  That's why my kale, grapefruit, and pepita salad has been the perfect lunch addition to my meal planning this week!

I've been drinking lemon water by the gallon and almost passed out from working out yesterday since I haven't been regularly doing that either...oops.  And yeah, why does it take so long to get in shape and so little time to get out of shape?  And then there are the cookies that are torturing me on my social media news feed from all of my favorite bloggers and I'm all like "veggies, lemon water, detox, you can do this Leigh Ann."

Chicken Shawarma over Greek Rice

Happy Monday guys!  The humidity is gone here for the week here in Louisiana, leaving me feeling slightly more like Christmas is less than twenty days away.  That also means I have lots to do since I don't even have one Christmas present under the tree.  Yikes.  And with all the cookies and hot chocolate that are tempting me everywhere I look, I need a healthy and quick meal that can balance out my sugar intake.  My chicken schwarma over Greek rice is one of our favorite meals and is a healthier version of a meal that I crave on a weekly basis.

We are regulars at a local Lebanese restaurant here in town.  Their chicken schwarma is the best I've ever had and their rice is full of flavor, so much that Canean always orders an extra side of just the rice.  I started making my at home version of this meal a couple of years ago to shave a few calories, that and it was kind of getting embarrassing how often we were picking up the same meal week after week!

Roasted Chipotle, Satsuma, and Rosemary Chicken

Tomorrow I leave for California and I have a list of to-dos a mile long today to get ready for the trip.  One of which is cooking a couple of easy meals for Canean to eat so he doesn't end up at Jimmy John's every night for the next eight days.  I like to make things that he can eat two or three times and that are easy for me while I run around like a crazed person...it's all in the multitasking!  This roasted chipotle, Satsuma, and rosemary chicken is amazing guys and really easy too, and today I need easy.

I know while your other favorite food bloggers are posting turkey recipes already I am posting this chicken recipe, but honestly you could do this exact same marinade and rub on your Thanksgiving turkey and it would be a A-MA-ZING!  I might be a little behind schedule this year with my holiday preparations, partly because we are heading to NYC for Thanksgiving and I am not in what I am going to cook mode, but I promise I won't let you down.

But back to this chicken though....I'm being so serious when I tell you that this chicken is out of this world.  Smoky chipotle mixed with sweet Satsuma juice and fragrant rosemary makes for a killer combo that you are going to love.
