She's a pint sized ball of fire usually seen in a killer outfit and she makes some of the prettiest food I've seen.  Meet Juley Le, always dressed impeccably with a knack for business and tasty food, she is a woman you are going to want to get to know!  I am super excited to share with you three of her favorite good for you meals as part of my healthy foodspiration series! 

We met at the West Elm grand opening preview in New Orleans this year and I was immediately taken by Juley's sweet demeanor and creative abilities.  She is a woman that is doing it all and is an inspiration for anyone with an entrepreneur spirit!

Ricotta, Honey, and Cracked Pepper Persimmon Toast

I was in denial about today being Monday all last night.  I procrastinated going to bed, refusing to let our week of vacation come to an end.  This morning I was so comfortable in my bed, there was a chill outside, and the last thing I wanted to do was get out of the bed and face Monday head on including lots of emails, errands to be run, and loads of laundry that are haunting me.  But...life must go on and I made myself get up.  Mornings like these call for easy breakfasts that I can throw together and not have to put a lot of energy into.  Not to mention, I need a little does of healthy in my life this week after indulging in eating my way through South Florida last week (more to come about that tomorrow).  This ricotta, honey, and cracked black pepper persimmon toast is the perfect start to my Monday and I think I might just eat it all week long.

I've already told you about my love for persimmons when I shared with you the persimmon spiced punch a couple of weeks ago, which would be the perfect Halloween drink by the way.  Eating it on a piece of toast slathered with ricotta and then adding a little honey and cracked pepper just makes me fall in love with the fruit even more.

Homemade Chicken Noodle Soup

Homemade Chicken Noodle Soup

I have memories of being sick growing up and eating a bowl of canned chicken noodle soup and not loving it. Matter of fact, I would have been fine never having another can ever in my life. It wasn’t until I became an adult and had homemade chicken noodle soup that I actually realized what all the fuss was about. There is a complexity in flavors from a homemade soup that a can cannot compare to. I like to make my own broth too which makes the soup that much better in my opinion and worth the extra effort. However, if you don’t have time a store bought broth will work just fine here. My homemade chicken noodle soup is so comforting and delicious and you are definitely going to be making it over and over again.

Crab Cake BLT's: My Diary of Us

Crab Cake BLT's

Ahhhh.  That's me taking a breath.  I know it's Monday, but I am happy about this week being here.  Last week went by in a blur and I don't remember much other than I was on robot mode to get everything done each day.  When life is busy sometimes you need a recipe that can be made into two meals because you just don't have the time or energy to deal with anything else.  These crab cake BLT's are my round two meal from my crab cake with spicy garlic dipping sauce recipe that I posted a couple of weeks ago.

Of course you won't make them weeks apart, and I didn't either, but I am just now getting around to sharing this amazing sandwich with you.  I apologize I didn't get it to you sooner, because it's one hell of a sandwich and you are going to love it.
