Grilled Chicken Skewers and Scallion Sauce

Grilled Chicken Skewers with Charred Scallion Feta Sauce

If you are looking for a new way to enjoy chicken, then these grilled chicken skewers with charred scallion feta sauce is just the recipe for you. These skewers are not only delicious, but they cook up quickly and are paired with the most delicious scallion sauce that really takes it all to the next level. They are perfect for grilling up any night of the week, but are also tasty enough to serve up for some end of the summer entertaining. You will love these flavors combined and adding this recipe to your weekly dinner rotation.

I love to use chicken thighs for this recipe, but you could also use breasts if you prefer, or a combination of both. I like to use the thighs myself because they stay nice and juicy on the grill and cook up quickly. If you are using breasts, the cook time will be slightly longer typically. The scallions go directly on the grill to get a nice char on them which is the base of the delicious sauce for the chicken. The charred scallions give the most delicious flavor to the sauce and it really pairs so well with the grilled chicken.

I marinate the chicken very simply with lemon juice, oregano, dijon mustard, garlic, and olive oil. This can be done up to two hours before grilling, but I would at least let it sit for 30 minutes. If you are adding lemon juice to any meat marinade, you don’t want to leave the meat in the acidity for longer than two hours so it does not break down the protein. You can add lemon zest if you need to marinate it longer and that way you get the lemon flavor without the acidity.

You can serve up these skewers a variety of ways, but here are a few of my favorite combinations.

  1. Serve up the skewers with grilled veggies and roasted potatoes.

  2. Serve up the skewers with the sauce in a pita and add lettuce, tomatoes, cucumbers, and extra feta for a Mediterranean vibe.

  3. Top a salad with the grilled chicken and use the sauce mixed with a little vinegar or extra lemon juice for a dressing.

There are so many options, but any way you enjoy them, you are going to love the flavors so much.

Grilled Chicken Skewers and Scallion Sauce

Ingredients:

For the Chicken-

  • 2 Lbs. Chicken Thighs

  • Juice from One Lemon

  • 2 Tbsp. Olive Oil

  • 1 Tsp. Oregano

  • 2 Finely Minced Garlic Cloves

  • 1 Tbsp. Dijon Mustard

  • 1 Tbsp. Kosher Salt

  • 1 Tsp. Pepper

For the Sauce-

  • 2 Bunches of Scallions

  • 1 Cup Greek Yogurt

  • 1/4 Cup Feta Cheese

  • 1 Tsp. Lemon Juice

  • 1 Tbsp. Red Wine Vinegar

  • 1 Garlic Clove

  • 1 Tsp. Honey

  • 1 Tbsp. Olive Oil

  • 1 Tsp. Kosher Salt

  • 1/2 Tsp. Black Pepper

Directions:

  • Cut the chicken thighs into bite size pieces.

  • Make marinade by combining lemon juice, olive oil, oregano, garlic, dijon mustard, and salt and pepper and whisking to combine.

  • Pour the marinade over the chicken and mix to coat the chicken thoroughly. Let it marinate for at least 30 minutes but no longer than two hours.

  • Heat the grill to 400 degrees.

  • Skewer the chicken pieces and then place onto the grill and grill on each side for a total of 10-12 minutes until chicken is cooked through.

  • Add scallions directly on the grill and char for 2-3 minutes on all sides.

  • While the chicken is grilling, make the sauce by combining cooled scallions, yogurt, feta, lemon juice, red wine vinegar, garlic, honey, olive oil, salt, and pepper and puree until smooth.

  • Remove the chicken from the grill and serve immediately with plenty of the charred scallion sauce on the side.
