Frittatas are a go-to meal at our house and this easy pizza version is our new favorite. This recipe is perfect for breakfast, lunch, or dinner and is customizable based on your favorite pizza ingredients. This pizza frittata is great when you want to satisfy those pizza cravings, but in a low carb way. I like to prepare this frittata to enjoy easy meals all week long when I need something on the table fast. This recipe for my easy pizza frittata is going to quickly become a new favorite recipe that you will want to make week after week.

A frittata is similar to a quiche, but does not have a crust making it even easier to whip up any time. I love that you can add any extra veggies to a frittata that you might have in your fridge at the time and it will always turn out delicious. This pizza frittata happened when I used some leftover pizza toppings for breakfast the next morning and since that day, I have made this recipe over and over again.

I like to use a combination of Italian sausage, onions, bell pepper, mushrooms, and pepperoni for the ultimate pizza combo. The eggs get seasoned with Italian seasoning, parmesan, salt, and black pepper to keep the pizza flavor going throughout the frittata. I serve it up alongside some marinara and garnish with fresh basil and red chili flakes and the result is so tasty! You are going to love it

Easy Pizza Frittata

Ingredients:

  • 8 Eggs

  • 1 Tbsp. Milk

  • 1 1/2 Tsp. Salt

  • 1 Tsp. Black Pepper

  • 1/2 Lb. Italian Sausage

  • Pepperonis

  • 1 Tsp. Italian Seasoning

  • 1/4 Cup Diced Bell Pepper

  • 1/4 Cup Diced Onion

  • 1/4 Cup Diced Mushrooms

  • 1/2 Cup Spinach

  • 1 Cup Mozzarella Cheese

  • 1/2 Cup Parmesan Cheese

  • Fresh Basil for Garnish

  • Red Chili Flake for Garnish

Directions:

  • Preheat oven to 350 degrees.

  • Heat a cast iron skillet (or oven safe skillet) over medium heat and add Italian sausage to the skillet and begin to brown.

  • Once the sausage starts to have some color on it, add in bell pepper, onion, and mushrooms and season with 1/2 tsp. salt and 1/2 tsp. black pepper and continue to cook until veggies begin to soften, about 2-3 minutes.

  • Add in the spinach at this time and stir until wilted.

  • While vegetables and sausage cook, whisk together eggs, milk, 1 tsp. salt, 1/2 tsp. pepper, Italian seasoning, and parmesan cheese until smooth.

  • Pour the well beaten eggs into the skillet spreading into an even layer.

  • Add pepperonis on top of the eggs and then cover with mozzarella cheese.

  • Place into the oven and bake for 15-20 minutes until the eggs are cooked through and top is golden.

  • Sprinkle with fresh basil and red chili flakes if desired.

  • Serve immediately.
