Chicken Parmesan Meatloaf

This easy chicken parmesan meatloaf is everything you love about traditional chicken parmesan, but made with less effort but with all the flavor! I love a weeknight meatloaf because it’s easy to make in advance or pop into the oven on a busy night and this chicken parmesan meatloaf is a new favorite dinner around here. This meal is a restaurant quality meal that can be on your table any night of the week.

Ground chicken gets seasoned with a mixture of onions, garlic, tomato paste, anchovies, and fresh parsley to create a rich flavor in the meatloaf from the inside out. The seasoned chicken gets formed into a meatloaf shape and topped with marinara and mozzarella cheese and then baked until the meatloaf is cooked through and the cheese is melty. I top it all off with fresh basil and love to serve it alongside a big caesar salad and some pasta.

This chicken parmesan meatloaf is one of my family’s favorite weeknight dinners and I know it will quickly become one of your family’s favorites too.

Variations of this recipe:

  • Make meatballs with the mixture instead of a meatloaf.

  • Make mini versions in muffin tins for individual portions.

  • Make this meatloaf in advance and simply reheat when ready to serve.

  • Use leftovers to make the ultimate chicken parmesan sandwich.

Chicken Parmesan Meatloaf

Chicken Parmesan Meatloaf

Ingredients:

  • 2 Lb. Ground Chicken

  • 2 Whisked Eggs

  • 1/2 Cup Bread Crumbs

  • 1/4 Cup Grated Parmesan Cheese

  • 1 Cup Finely Diced Onion

  • 2 Finely Minced Garlic Cloves

  • 2 Tbsp. Tomato Paste

  • 1 Tsp. Anchovy Paste or 1 Anchovy Filet

  • 1 Tsp. Italian Seasoning Blend

  • 2 Tbsp. Finely Diced Fresh Parsley

  • 1 Tbsp. Kosher Salt

  • 1 Tsp. Black Pepper

  • 2 Cups Grated Mozzarella Cheese

  • Fresh Basil for Topping

  • 1 Tsp. Olive Oil

  • 1 Cup Marinara Sauce

Directions:

  • Preheat oven to 350 degrees.

  • Heat olive oil in a skillet and add onion, garlic, tomato paste, anchovy paste, and Italian seasoning and sauté until onions begin to soften, about 5 minutes. Remove from heat and let cool.

  • Add chicken, eggs, bread crumbs, parmesan cheese, cooled cooked onion mixture, parsley, salt, and pepper to a large bowl and mix together until everything has been combined.

  • Place meat mixture onto a parchment lined baking sheet and form into a meatloaf shape, similar to a football shape and size.

  • Add marinara sauce to the top of the meatloaf and spread into an even layer.

  • Add mozzarella cheese on top of sauce and then place into the oven to bake for 55-60 minutes until the center reaches the temperature of 165 degrees.

  • Let rest for 5 minutes and then slice and serve with fresh basil on the top.

Note: I like to serve this meatloaf with a caesar salad and/or a simple pasta with marinara on the side with red chili flakes and extra parmesan.
