Carnitas Stuffed Sweet Potatoes with Skillet Elote

Weeknight dinners may seem daunting, but they sure don’t have to be. I partnered with my friends at AdapTable Meals to give you a new weeknight dinner idea that is sure to become a household favorite! I used AdapTable Meals’ pork carnitas and created a healthy and delicious dinner idea complete with a side dish of skillet elote (Mexican street corn) that makes for an effortless meal that the whole family will love. Carnitas stuffed sweet potatoes with skillet elote is perfect for any night of the week.

What I love about AdapTable Meals is that you get high quality protein that is already seasoned and ready to go right in it’s package. It’s eliminates the prep step in cooking and all I have to do is decide if I want it in my slow cooker, instant pot, or in the oven. The meat and seasonings are gluten free, no artificial ingredients, and the flavors are always so good! Simply add a side dish and your meal is complete. How easy is that?

I created these carnitas stuffed sweet potatoes by simply roasting off some sweet potatoes and stuffing them with the delicious AdapTable Meals Pork Carnitas and then topping each potato off with all of the yummy toppings that you desire! I personally love cilantro, jalapeños, pickled red onions, avocado, and a little freshly squeezed lime juice. I serve them up with a ten minute skillet elote, which is Mexican street corn and the dish pairs perfectly with the stuffed sweet potatoes.

I simply cooked the meat in my pressure cooker by searing it first and then adding about an inch or water and turning to pressure cook for 40 minutes and let me tell you that the meat was so tender and shredded easily. It was so so easy and I am so pleasantly surprised at the flavor of the meat without me having to season it! It’s a win-win!

Carnitas
Carnitas Stuffed Sweet Potatoes

Ingredients:

  • AdapTable Meals Carnitas Pork Roast

  • 1 Cup Water

  • 4 Sweet Potatoes

  • Pickled Red Onions (optional)

  • Cilantro

  • Jalapeno

  • Avocado

For the Elote:

  • 4 Cups Corn (Fresh or Frozen)

  • 1/4 Cup Lime Juice

  • 2 Tbsp. Mayonaisse

  • 2 Tbsp. Greek Yogurt

  • 1 Tsp. Salt

  • 1/2 Tsp. Black Pepper

  • 1 Tsp. Chili Powder

  • 1/2 Cup Cojita Cheese

  • 1/4 Cup Chopped Cilantro

  • 1 Tbsp. Avocado Oil

Directions:

  • Preheat oven to 450 degrees.

  • Poke holes in sweet potatoes and place onto a baking sheet and roast for 50-60 minutes until tender.

  • Turn pressure cooker to sear and sear AdapTable Meals Carnitas Pork Roast on both sides. Add water and then switch the pressure cooker from sear to pressure cook and cook for 40 minutes. Release the pressure and then shred meat.

  • When the carnitas are almost done, combine mayonnaise, Greek yogurt, lime juice, salt, pepper, and chili powder together and whisk to combine.

  • Add oil to a skillet along with corn and sauté for 2-3 minutes. Add in the mayo mixture and continue to cook for another 2-3 minutes.

  • Sprinkle in cojita cheese and cilantro at the end and give it one last stir.

  • Slice sweet potatoes in half, not cutting all the way through and then stuff with the carnitas and top off with desired toppings. Serve immediately.
