Blueberry Vanilla Oatmeal

We had the best weekend guys.  The weather was gorgeous, we hung out outside literally all day on Friday and Saturday and it was just one of those perfect weekends that you don't ever want to end.  I am always excited for a new week/fresh start, but I have to say that I am a little sad to see this particular weekend come to a close!  However, with a new week and fresh start, we also get back to our favorite weekly recipes that are healthy, full of nutrients, and keep us going all day long!  We usually rotate through a few favorite weekday breakfasts, but one recipe that I continue to make over and over is my blueberry vanilla oatmeal!  

Parks loves oatmeal, but this particular blueberry vanilla oatmeal happens to be his favorite, and is quickly becoming one of my favorites too!  There isn't anything particularly fancy about this recipe, but it is packed with some serious nutrition perfect to kickstart any day of the week for parents and kiddos!  There is something about the tangy blueberries with the vanilla that make for the best combination!  This oatmeal is creamy, delicious, and easy to make!   I love starting my day out with something warm and hearty to get my blood flowing!  

I load these oats with healthy fats, omega 3's, antioxidants, and fiber to create a balanced and hearty breakfast that will stick with you until lunch!  You can make them your own by adding or taking away any ingredients that you have on hand and can even turn them into overnight oats if you prefer eating oatmeal that way!

Not only are these oats super tasty, but they are also so beautiful too.  When the blueberries cook, they burst leaving the prettiest purple hue running throughout your oatmeal.  I can't get enough of this breakfast and I can't wait for you to give them a try too!

Ingredients:

  • 1 Cup Old Fashioned Rolled Oats
  • 1 Cup Whole Milk (or non-dairy milk of choice)
  • 1/4 Tsp. Ground Cinnamon
  • 2 Tbsp. Chia Seeds
  • 1 Tbsp. Hemp Seeds
  • 1 Tbsp. Coconut Butter 
  • 1 Tsp. Vanilla Extract
  • 1/4 Cup Blueberries (fresh or frozen)
  • 1 Tbsp. Maple Syrup or Honey

Optional Add Ins:  Grated Zucchini, Collagen Peptides, Nuts

Directions:

  • Combine all ingredients except for maple syrup or honey into a saucepan and gently bring to a simmer.  
  • Continue to stir every so often until oats thicken and are soft.  Add a little water or more milk if needed for consistency.
  • Take off heat, add in sweetener of choice and top with more berries, chia, and any other toppings you like.
  • Serve immediately.
