Boozy Egg Nog Ice Cream and Ginger Cookie Sandwiches

I have a confession to make.  I have made this recipe before on the blog.  It was early on into my blogging days and I just wasn't satisfied with my old pictures enough to repost them, and I think that sometimes if a recipe is yummy enough it deserves a do over.  A chance to get the spotlight that it deserves you know what I mean?   So I thought since I was reshooting my recipe, I would add a little booze into the mix too..because why not?  Boozy egg nog ice cream and ginger cookie sandwiches are one of my favorites during the holidays and you totally have time to make them before Thursday.

My mom popped into town on Friday for a little surprise Christmas visit for the weekend and these ice cream sandwiches were part of our equation for obvious reasons.  Creamy spiced ice cream spiked with a little bourbon sandwiched between two chewy ginger and molasses cookies makes for the ultimate holiday dessert and I for one am a fan of ice cream all year round.  Matter of fact we ate ours in front of a fire for the perfect before bedtime snack/night cap.

Mulled Wine: My Diary of Us

Mulled Wine

The house we live in was built in 1910 and was built off of the ground, as most houses in Louisiana are, and while it's character and charm are what we love most there is a downside.  When it gets below 55ish degrees outside, you can bet that it is cold in the house and it's really hard to keep warm.  The floors hold no heat so slippers are a must...and layers, lots of layers...and a glass of mulled wine helps too.

I know that I am a complete an utter sissy when it comes to being cold.  I don't know if I could make it in a place that actually got cold weather.  I attribute that to living in Louisiana for too long.  We don't really get winters.  Most Christmases are spent, if we are lucky wearing light jackets.  It isn't until January that we have a smidge of winter weather.  

But in my case 50 degrees in winter enough for me and plenty of reason to build a fire and make some mulled wine.  This week there has been a nip in the air, enough for me to turn the heat on and cozy up with a blanket every night.  Add some spiced warm wine and you almost forget that your feet are freezing.

Pepper Jelly Roasted Carrots

Okay people, Christmas is a week and a day away so we have to get serious about what's going to be on the table for Christmas dinner.  I am torn between a traditional Christmas dinner or full fledged Italian.  Decisions, decisions.  If I go the traditional route, which for me means a standing rib roast with a bunch of veggies served on the side, these pepper jelly roasted carrots will be making an appearance no doubt about it.

Canean loves carrots, like they are probably one of his favorite vegetables, raw or cooked.  Maybe he's part rabbit.  For some reason when I was growing up I didn't eat too many cooked carrots, I guess because my mom isn't that crazy about them.  I started making them myself more in a,  they go with a roast in a crock pot kind of way, and then got smart and started roasting them in the oven.

Pesto and Goat Cheese Spread with Cranberries and Toasted Pine Nuts

Y'all...Christmas is nine days away...NINE days away! How did this even happen? I am kind of unprepared and am just now starting to plan what I want to fix for Christmas dinner. And with Christmas parties in full swing over the next week, we could all use an easy appetizer to whip up that requires little to no effort! This is my go to holiday appetizer because one, it's gorgeous and perfectly red, white, and green, two it's delicious, and three I can make it in ten minutes. My pesto and goat cheese spread with cranberries and toasted pine nuts couldn't be more perfect for your holiday festivities!

Range and Sea: My Diary of Us

Range and Sea

Hi guys!  How was your weekend?  Mine was pretty great.  It was filled with a my sister-in-law's baby shower, a Christmas party, baking cookies and doo-dads, and some lazy couch time with Canean.  I realized that I haven't even had time to share with you some of my favorite images from my road trip that I went on in November because my schedule has been so crazy for the past month or so.  The trip from California to Oregeon was one of the most beautiful that I have ever been on and I just had to share with you a few of my favorite images of some of the gorgeous places that I saw!  From Range to Sea, I am still not sure what my favorite thing was.

I am so blessed to have had the opportunity to experience such beauty and parts of the country that I had, up until this trip had only seen on postcards and in movies.  From the mountains, to the ocean, and everything in between I was utterly gobsmacked at what I saw in every new place that we drove through.

Bourbon Salted Caramel Mochas

Pumpkin Latte, Smumpkin Latte...give me the salted caramel mochas at Starbucks any day. I know they are horrible for me...but they only come around once a year and I can't resist a salty and sweet combo...so sue me.  I get 'em every chance I can during the months of November and December and half of the time I don't even ask for skim milk (gasp).  I was talking with a friend who is equally as obsessed as I am and we mentioned how some bourbon would the perfect addition for a holiday after dinner drink!  Challenge accepted...and I present to you, at home bourbon salted caramel mochas!

You know how after a big holiday meal, you really want dessert but there really isn't that much room left in your belly and then you end up eating that piece of pie anyway and your stomach hates you for the next two hours and your pants feel like they might decide to pop open at any second?  Yeah..I know that feeling, it happens a little too often during the holidays.
