Whole Wheat Pita "Calzones" (three ways)

It's Superbowl season.  That means the parties are about to start and your diet is about to run right off the tracks.

But wait...it doesn't have to!  I have the perfect thing for you to make for your party this year or to bring wherever you are going!  It is low fat, easy, and everyone will think you are a genius!

They are my whole wheat pita calzones.  I mean a calzone without having to roll out any dough?  Sign me up!  

Who doesn't love a calzone honestly?  And these are about the easiest thing to make....ever!  Perfect for a party because you can make everything ahead of time and let your guests create their own and then pop them into the oven!  That way everyone makes what they like!  Your meat lovers, your veggie lovers, and your picky eaters will all be happy!

Won't it be nice to not have to think about psyching yourself up for having some will power at one of the parties you will go to?  I know for me, I always have to have a pep talk with myself about how to say no to all of the fatty things that I know are going to be taunting me the whole night!  This year, I don't have to because I am not going to feel deprived at all and my guests will never miss any of that junk food!

I like to set all of my ingredients up buffet style and that way your guests can make their pita calzones as they get hungry and then just pop them into the oven!

Oh, the Places You'll Go

It's one of my favorite Dr. Seuss books.  I love everything that this book has to say even now as an adult.

"Today is your day.  You're off to Great Places!  You're off and away!"  

What a great way to start off a book.  Everyday is YOUR day.  Everyday is MY day.  If you have this mentality life is a little easier.  It's hard because sometimes in this journey of life, we can feel lost, overwhelmed, disappointed, happy, excited, and every other emotion in between all within a moment's time.  A curve ball that can be thrown at any time seems like it is always waiting to be hurled at you when you least expect it.  But that doesn't always have to be a bad thing.  Sometimes it's just what you need whether you knew it or not.  

It's only been ten months since we sold our home in Louisiana and moved to Texas and I'm already packing again to move next week.  When we left, we had plans on being on the road from place to place over the next several years.  We had no idea that in a very short amount of time we would be led right back to a place we consider home.  A full circle right back to Louisiana.  Wow...I never saw that coming.

I love a good weeknight meal that I can whip up fast and feel good about feeding my family!  Meals that can be ready in under thirty minutes and that are on the healthier side are always a winner at my house!  We happen to love Asian food and crave it on the regular, so I try to make my own versions of all my favorite recipes at home so that I can control the ingredients!  My Asian chicken lettuce wraps are one of my favorite go-to dinners that my boys will gobble up in a heartbeat!

Distance and Us

It's the story of two teenagers.

A chance meeting that lead to an unexpected spark.

This quote really hit home for me as I reflected over the past year. 

In the moment even though life is changing, it seems to stay the same.  And then all of the sudden when I take a moment to look back everything is in fact different. 

I am different, my life is different, my goals are different, and I've grown into a different person...a better person hopefully.  Little things that at one time seemed so important to me, no longer matter.
