Chili Grapefruit Salmon Salad

The weather has been a little warm here in Texas this week and I have been craving fresh salads with lots of fresh ingredients including anything and everything citrus! I made a lunch based on these cravings yesterday that will be on a weekly rotation in my house from here on out. It was one of those salads that was a happy accident that came from using ingredients I had in the fridge! I literally couldn’t stop saying “mmm” to myself while I was eating it (you know what I am talking about) and knew I had to share it with you all as soon as possible! My chili grapefruit salmon salad is not only super healthy, but is also full of fresh flavors that truly make the perfect lunch or light dinner any night of the week!

Shrimp Spring Roll Salad

I love taking traditional recipes and turning them into something new.  Spring rolls are one of my favorite takeout items, but for some reason I never make them at home!  I love that they are light, packed with flavor, and usually packed with veggies too!  If you saw my Spicy Garlic Sesame Chicken post, then you already know that I am currently obsessed with my Ecotierra Organic Sesame Oils!  They have become one of my favorite oils to keep in my pantry and I have been using them for everything from sautés to dressings!  One of my new favorite recipes that I have been making is my Shrimp Spring Roll Salads that has everything that I love about a traditional spring roll, but deconstructed in salad form!

Top 10 Favorite Winter Salads

We spent the weekend baking batch after batch of cookies and although it was so much fun and we were making such special memories, I feel like I could use a salad in my life this week! I figured that you might be feeling the same way in a season of Christmas cookies, treats, and more being at the forefront of everyone’s minds. I find that we tend to eat less salads in the winter time mostly because the weather shifts, but I have a few of my favorite salads that are seasonally appropriate for this time of year! Autumn Wedge Salad with Green Goddess Dressing

At this time of year, warm and cozy dishes seem to get all of the attention! From soups, to pastas, and everything in between, it feels like sometimes we forget about eating salads during this season! I don’t know about you, but I still crave some freshness in the midst of all the cozy! A good fall salad is one of my favorite dishes to make and I took one of my favorite wedge salads and turned it into the most delicious autumn wedge salad that you have ever tasted! Fall Chicken Salad with Pepita Granola and a Pumpkin Vinaigrette

Can someone please tell me where September went? Honestly I can’t believe that October is next week and my baby boy turns 3 on Monday! This year is going by at a scarily fast pace, don’t you think? I love this season of cozy foods and all that comes with it and want to savor it while its around! (Time slow down please.) While I may not be getting to wear my fall favorites, because Texas fall doesn’t like to allow for flannels and sweaters, I am embracing fall flavors in the kitchen! This fall chicken salad with pepita granola and a pumpkin vinaigrette is going to knock your socks off in the flavor department and is the perfect fall salad to make all season long!

Sumac Roasted Chickpea Caesar Salad

This week I managed to take my child to school on a day that he didn't in fact have school (I may have almost cried), on top of that Parks has woken up at 5am or somewhere in that time frame every single day leaving me feeling more tired than usual, and it seems like I can't get into my routine this week!  Do you ever have weeks like that where you just feel off?  (Please tell me I'm not alone here.)  Thank goodness for easy recipes that save the day when my brain clearly isn't working so I don't have to put much effort into creating a delicious recipe that the whole family loves.  My sumac roasted chickpea Caesar salad is just the kind of meal that nourishes your body, tastes delicious, and is easy peasy too!
