Homemade Sausage Stuffing

Happy Monday guys!  We are officially ten days away from Thanksgiving and I am pretty darn excited about it!  Everyone has a favorite dish that makes or breaks a good Thanksgiving meal, and for me that dish is stuffing...or dressing...or whatever you call it.  My homemade sausage stuffing is honestly my favorite part of the entire Thanksgiving meal.  It's the texture, it's the flavor combinations, it's that combined with a bite of turkey it is just the perfect Thanksgiving bite wrapped into one!  To me, if there is one dish to make to go alongside your turkey this year, it's gotta be my homemade sausage stuffing!

Roasted Beet and Acorn Squash Autumn Salad

Oh man, the weather here over the weekend was absolute perfection.  Windows were open, there was a crispness in the air, and I actually could feel fall.  We had Parks' 1st birthday party and celebrated with friends and family and it couldn't have been a more perfect day.  His birthday will always signify the start of fall since it's on October 1st, and to me it doesn't seem like fall until October.  One of my favorite ways to get into any season is to start cooking with my favorite seasonal flavors.  My roasted beet and acorn squash Autumn salad is the perfect side dish or meatless dinner that will have your tastebuds in total fall bliss!

Cinco de Mayo is this weekend y'all, and let's be real about why we love this holiday.  It's the perfect excuse to eat all the chips, guac, and queso that we want, and we can drink all the margaritas without feeling guilty.  I've semi been celebrating all week and in fact, you SHOULD celebrate Cinco de Mayo all week long because there can never be enough Mexican food and drinks in my opinion.  We are just cooking at home this weekend and having some friends over, and I figured most of you might be doing the same, so I'm sharing my Cinco de Mayo recipe roundup to help you plan out your weekend festivities!

Wishing you a Merry Christmas

Hi guys, Merry Christmas!

I am going to be honest here, I am struggling with what to write this morning.  I had this whole plan of writing a normal happy holiday post because as of two days ago that's how I felt.  And then the night before Christmas Eve was a hard one.  I found out some news about a family member that hit me like a train wreck.  

You know when something happens that you think could never possibly happen in your life?  It only happens to other people and in movies, never to you.  Well one of those things is happening currently in my family...

Pepper Jelly Roasted Carrots

Okay people, Christmas is a week and a day away so we have to get serious about what's going to be on the table for Christmas dinner.  I am torn between a traditional Christmas dinner or full fledged Italian.  Decisions, decisions.  If I go the traditional route, which for me means a standing rib roast with a bunch of veggies served on the side, these pepper jelly roasted carrots will be making an appearance no doubt about it.

Canean loves carrots, like they are probably one of his favorite vegetables, raw or cooked.  Maybe he's part rabbit.  For some reason when I was growing up I didn't eat too many cooked carrots, I guess because my mom isn't that crazy about them.  I started making them myself more in a,  they go with a roast in a crock pot kind of way, and then got smart and started roasting them in the oven.

A Holiday Spark

I don't know about you, but this year I have had a hard time getting into the holiday spirit.  It just hasn't felt like the holidays usually feel to me.  For the past eight years, I have worked in retail and the holidays usually start in October.  So by Thanksgiving, I am in full holiday mode already playing Christmas music, burning pine scented candles, and driving my husband crazy with asking if I can put up the tree yet.
