Grilled Lemon, Shrimp, and Asparagus Orzo Salad

I’ve been thinking of doing a series on grilling this summer because it seems to be a cooking method that a lot of people are intimidated by, when actually it’s quite simple! It just so happens to be one of my favorite ways to prepare food! I love that I can literally throw anything onto the grill and make my whole meal without even turning my oven on, especially when I don’t want to heat up my house in the hotter months! It truly makes easy weeknight cooking that much easier! My grilled lemon, shrimp, and asparagus orzo salad is one of those easy meals that can be prepared on the grill and is perfect for any night of the week or for a weekend BBQ!

Easy Panko Crusted Baked Cod Fish

I made this Easy Panko Crusted Cod Fish last week on Instagram and I had an overwhelming response of people wanting the recipe for it! I can see why because not only is it delicious, but it could not be any easier to make (fifteen minutes easy to make). It was one of those recipes that I made by accident a few months back that turned into one of my favorite fish recipes! It’s my go-to weeknight meal lately and even my three year old gobbles his fish right up! It can be easily served with your favorite vegetable of choice to make a super simple and healthy meal that can be made on even the most exhausting of days! Chipotle Chicken Skillet Enchiladas

I’ve always been a fajita girl when it comes to ordering out at a Mexican restaurant, while my hubby for a long time was more of an enchilada kind of guy. (I converted him to love fajitas so we could share…wink wink.) I love enchiladas too don’t get me wrong, but I tend not to order them out because I feel like they are one of the less healthy options for me to get, and you already know I am not sacrificing the chips and salsa or the margarita! You get what I’m saying here? To compromise, one of the things I like to do with dishes that I love is to recreate some of my favorite restaurant style dishes, that may not be as healthy, at home so that I can have control of the ingredients while still satisfying that craving! My Chipotle Chicken Skillet Enchiladas are just the kind of dish that you would order out at a restaurant, but can be made right in your own kitchen!

Easy Red Beans and Rice

I must be missing Louisiana lately, because I keep making my favorite traditional dishes. Yesterday I made a homemade king cake because I have been craving one for weeks now and today I woke up dreaming about red beans and rice for dinner. We have lived in Texas for almost four years now, but every year around this time I start to miss Louisiana and all of the food and celebrations that happen from Mardi Gras on. The classic dishes that are known in Cajun and Creole cultures are some of my favorite recipes I’ve ever had and truly what made me fall in love with Louisiana when I moved there. My easy red beans and rice is just that kind of recipe and makes for the perfect cozy weeknight meal that the whole family will love!
