Easy Homemade Meatballs in Marinara

Healthy Red Thai Curry Lentils

Well it happened, the weekend came and went in a flash just like it always does.  Our weekend consisted of getting a new washing machine because last week the transmission in our old one went out, which come to find out repairing it would have been more than the new one we bought.  Oh the joys of adulting right?  On a positive note, I made some serious ground on the cookbook I am currently writing, Baby's First Eats!  I still have a list a mile long every day until my deadline, but I'm are making some serious progress people.  Since I am cooking all day everyday right now, easy dinners (that are healthy too) are a must!  My healthy red Thai curry lentils are the perfect weeknight dinner for hectic weeks like the ones I have in my future!

Healthy Whole Wheat Shrimp Pasta with Kale Pesto

Thanksgiving is over...did you make it through?  Are you still in stretchy pants?  Because it's totally okay if you are.  If you had a week anything like mine, you are probably trying to get back on a the healthy diet bandwagon (if not for only a few weeks before Christmas) and are looking for recipes that aren't lacking in the flavor department.  My healthy whole wheat shrimp pasta with kale pesto is just the kind of one pot meal that will have you forgetting that you are eating something completely good for your body.

Easy and Healthy Breaded Chicken

I am always looking for ways to cheat my way into satisfying my cravings.  It's a trick I love to do because I refuse to give up the foods that make my belly do a happy dance!  Whether it's my favorite pasta, burger, or ice cream I can guarantee I will find a way to cut some corners to make it an acceptable part of my weekly meal plan.  Fried chicken is no different and because we seriously hardly ever indulge on the real thing, my easy and healthy breaded chicken is the golden ticket in satisfying my tastebuds.

Roasted Beet and Acorn Squash Autumn Salad

Oh man, the weather here over the weekend was absolute perfection.  Windows were open, there was a crispness in the air, and I actually could feel fall.  We had Parks' 1st birthday party and celebrated with friends and family and it couldn't have been a more perfect day.  His birthday will always signify the start of fall since it's on October 1st, and to me it doesn't seem like fall until October.  One of my favorite ways to get into any season is to start cooking with my favorite seasonal flavors.  My roasted beet and acorn squash Autumn salad is the perfect side dish or meatless dinner that will have your tastebuds in total fall bliss!

Roasted Butternut Squash and Apple Soup with Sage Oil

Dare I say that I can finally feel a hint of fall?  The air is definitely changing here in Texas, even though it is still pretty hot compared to some other parts of the country, it's feels pretty great to me.  I had the windows open all weekend and definitely felt the fall baking bug and soup cravings hitting me hard.  Anyone else have this happening right now?  My roasted butternut squash and apple soup with sage oil is going to cure your soup hankering by giving you a hug from the inside!
