Olive Oil Chocolate Zucchini Snack Cake

Zucchini season is in full swing and I don’t know about you but every week I find myself with several zucchini staring at me in the fridge. I love buying a few extra zucchini each week because they are great to freeze to throw into smoothies and they are great for baking! Chocolate and zucchini are actually quite a common pair when it comes to baking and it’s a great way to add some veggies into a sweet treat that the whole family can enjoy. I created an olive oil chocolate zucchini snack cake that is perfect to make when you want a little treat when that afternoon snack attack hits!

Chocolate Chip Toffee Cookies

Baking for me is not something that I do on a regular basis, but it’s something that I get in the mood for and when that mood strikes, I love the process of baking. It’s therapeutic in it’s exact measuring and mixing and there is nothing better than the smell of baked goods wafting throughout your house to bring you an immense amount of comfort and joy. Cookies are one of my husband’s favorite sweet treats, and while I don’t make them often, when I do, they have to be the best. What makes a good cookie to you? For me its all about those crispy edges and chewy centers that really make or break what I consider a great cookie. I have been perfecting my chocolate chip toffee cookies for a couple of years now and finally created the perfect cookie and am finally ready to share them with you. My chocolate chip toffee cookies are hands down my favorite cookie and if there is one thing you bake this week, let it be these cookies.

Gluten Free Chocolate Covered Strawberry Pie

Do you celebrate Valentine’s day at home or do you go out with your significant other or girlfriends? We typically stay home and I make a special meal for me and my hubby to enjoy after our kiddo goes to bed! I usually don’t make dessert to go with our meals, but because it’s a special occasion I like to have a little something sweet for after dinner. My hubby loves a pie and so I came up with the ultimate Valentine’s Day pie to surprise him with that is not only easy to make, but is on the lighter side too! Chocolate covered strawberries are the quintessential Valentine’s Day treat, and I turned that same idea into a lovely pie perfect for celebrating love! Healthier Gingerbread Blondies

It is hard to believe that we are a few weeks away from Christmas and baking season is officially upon us! For me it’s the most magical time of the year and I hate that this season seems to already be passing so quickly. Anyone else want December to last just a little bit longer? Every holiday season, my baking bug returns almost instantly as the tree gets decorated and the house feels extra cozy. While I love baking the traditional recipes, I am all about finding recipes that are slightly better for me that I can bring to all of the holiday festivities that come about this time of year. Gingerbread is one of those quintessential holiday flavors that is my go-to whenever I decide to bake. It smells the house up with warming spices that just say merry Christmas. My healthier gingerbread blondies are chewy and delicious and your family and friends will love them this holiday season!

Sheet Pan Pumpkin Bars

Is it really Halloween in two weeks?  I have no idea where October is slipping off to.  Life has been so crazy with work and personal stuff that the weeks are passing by at a scary pace! I can’t believe we are almost into full blown holiday season mode. With the holidays, comes lots of baking right? Well for me anyway it does.  I just so happen to have a few recipes that I make over and over again, and one of them is my sheet pan pumpkin bars! They are always a crowd pleaser and couldn’t be any easier to make! I will most definitely be making a batch of these for Halloween this year as well as for the rest of the holiday season!
